Hope everyone celebrated the Fourth of July and all that it means to you!

We spent our holiday at home just chillin’– literally and gratefully!    Friends between us and the East Coast were sweltering because of the high windstorms that wiped out power lines.  Relatives in the western part of the country were closely watching wildfires.  In both cases, many folks had to seek alternative shelter.  How would you even prepare for such an event, I wondered.  I came up with 9 checklists to help if evacuation becomes necessary.  Feel free to scroll down to the post below or click here and help yourself to the checklists.  We all hope no one has to use the information, but just in case . . .  a public service announcement : 0)

  2. [...] Preheat oven to 375 F. Add oil to a large glass baking dish.I used expeller pressed coconut oil. Spread around to coat bottom of pan. In a medium bowl add dry bread crumbs. Add garlic powder. Add oregano. Add cayanne pepper. Add cheese and mix. If the chicken breasts are large I cut in half so they will have more coating After you cut in the chicken in half rinse under cool water and dip into mixture until coated. Lay evenly in the greased glass pan. I sprinkle any remaining coating on the top of the chicken. Bake for 30 minutes or until the internal temperature reaches at least 165. F If you like them browned more on top put them under the broiler for a couple minutes. Crisps up the bread and cheese. Yummy.
