Herb Crusted Tilapia

A handsome fish dish, freshly crispy, with a gently herbed panko crust.

Ingredients
  • 1 cup panko
  • 1 tbsp basil, fresh chopped
  • 1 tablespoon parsley, fresh chopped
  • ½ teaspoon onion powder
  • 1 teaspoon garlic, minced
  • 24 ounces tilapia fillets ( 4-6 ounces, each)
  • 2 tablespoons flour
  • ¾ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 large egg, lightly beaten
  • 2 tablespoons olive oil
Instructions
  1. If fish is frozen, defrost in refrigerator overnight before cooking.
  2. If baking, preheat oven to 450 degrees
  3. Combine panko, parsley, onion powder and minced garlic in small dish
  4. Lightly beat egg in second shallow dish
  5. Measure flour into a third shallow dish.
  6. Put oil in large nonstick skillet over medium heat.
  7. While skillet is coming to temperature, sprinkle fillets with salt and pepper, Dredge each fillet in flour, then egg mixture, then in panko mixture.
  8. Cook fillets in oil for three to four minutes on each side or until browned and fish flakes easily when tested with a fork.
