Scottsdale Cheesy Potatoes
- 1 32 ounce bag frozen hash brown potatoes
- 1 can cream of chicken or cream of mushroom soup
- 1 16 ounce container sour cream
- 2 cup shredded cheddar cheese
- ¼ cup chopped onion
- ¼ teaspoon pepper
- 1 tsp salt
- ½ cup butter or margarine melted
- 2 cups finely crushed cornflakes -optional
- Mix all ingredients except melted butter.
- Spray 9x13 baking pan with cooking spray.
- Spread casserole evenly into pan.
- Melt butter in microwave and pour evenly over casserole.
- Bake at 350 degrees for 40-45 minutes.
- Sprinkle the 2 cups of finely crushed cornflakes evenly over the top, if desired.
