Almond Coconut Crunch Cookies

Serves: 4 dozen
Ingredients
  • 1 cup butter softened
  • ¾ cup sugar
  • ¾ cup brown sugar, packed
  • 2 eggs
  • 2 Teaspoons vanilla extract
  • 1 teaspoon almond extract
  • 2 cups flour
  • 1 teaspoon baking soda
  • 34 teaspoon salt
  • 2 cups flaked coconut
  • 1 package (11 – 12 ounces) chocolate chips
  • 1 ½ cups chopped almonds
Instructions
  1. In large bowl, cream butter and sugars until fluffy.
  2. Beat in eggs and flavorings.
  3. Add flour 1 cup at a time. Add baking soda and salt with the last cup. Mix well.
  4. Stir in coconut, chocolate chips and chopped almonds.
  5. Drop by round spoonful 2 inches apart onto ungreased baking sheets.
  6. Bake at 375 degrees for 9-11 minutes until lightly browned.
  7. Cool slightly before removing to wire racks to cool completely.
