What do you do with a bag of bananas? Make Peanut Butter Banana Ice Cream! One of the little groceries in town is a great place to find unexpected bargains. Last time I was there, they had just set out bags of perfect golden yellow bananas. I brought one of the bags home with me. Since none of the bananas were over ripe, I figured I would have time to research recipes. Here’s the first recipe I made: Peanut Butter Banana Ice Cream is simple – and supper delicious. Cut up four bananas and freeze till firm. Put frozen bananas in food processor, add the other two ingredients. It does not matter if the peanut butter is creamy or chunky. Any kind of milk will work. Spin until mixed. Freeze again. Yum! Hint: Forget using the blender. You’ll end up with a frozen glob above ... [Read More]

Chocolate Covered Peanut Butter Balls
Chocolate Covered Peanut Butter Balls -- a yummy takeoff on a certain peanut butter filled chocolate cup. They are easy to make with only five ingredients and go together very quickly. Plan for time - and space in the freezer - so they set up firmly before dipping in melted chocolate. You can use melted chocolate chips for dipping. I prefer the melting chocolate wafers with a bit of coconut oil added. I've also used almond bark with coconut oil. Practice does help! (These Peppermint Patties were my first attempt at dipping candy.) Chocolate Covered Peanut Butter Balls Print Prep time 20 mins Total time 20 mins Creamy peanut butter filling wrapped in chocolate. Elvis Cookies
A special cookie in honor of the King. Elvis Presley was famous for liking peanut butter and ‘nanners. Probably chocolate chip cookies, too -- because who doesn’t like chocolate chip cookies??? I just sorta do ‘em all together, I guess." Elvis Presley in ... [Read More]

Peanut Butter Double Chocolate Bars
Christmas at Wheel's family farm included candy. I zeroed in on the Peanut Butter Chocolate Bars Grandma made. The peanut butter cup knockoff. Tastes just like the cups in the bright orange wrapper -- aka Reese's Peanut Butter Cups! Sweet peanut butter wrapped in chocolate -- bliss! This is a very simple recipe – four ingredients counting the secret and unexpected one. It’s faster to make with a food processor and the microwave, but easily done by hand. I cut the recipe in half to make 32 pieces in an 8x8 pan instead of the 48 pieces Grandma made in a 9x 13. Line the 8x8 pan with non-stick aluminum foil, parchment or wax paper leaving a 3 inch overhang on each end to make “handles” so you can lift the candy out of the pan for slicing without losing a single piece.
