Ingredients

1 package baby spinach
3 hard cooked eggs
8 slices bacon, crisp-cooked and crumbled

Dressing

½ cup olive oil
¼ cup cider vinegar
3 Tablespoons lemon juice (I used lemon crystals)
½ teaspoon salt
Dash of pepper
1 clove garlic (I used 1 tsp minced garlic from a jar)

Instructions

Combine all dressing ingredients in jar and shake well. Set aside for flavors to meld.
Lightly toss spinach with egg, bacon and onion. Cover and refrigerate at least 2 hours
To serve, shake dressing vigorously and pour over salad until spinach is well coated
