Cheesecake Bars A Pinch of Joy

Ingredients

Crust

  • 1/3 cup margarine or butter
  • 1/3 cup brown sugar, packed
  • 1 cup flour
  • 1/2 cup walnuts, chopped

Filling

  • 1/2 cup sugar
  • 1 8 ounce package cream cheese, softened
  • 1 egg
  • 2 Tablespoons milk
  • 1 Tablespoon lemon juice
  • 1/2 teaspoon vanilla extract.

Instructions

  1. Cream butter and brown sugar.
  2. Add flour and chopped nuts and mix until crumbly.
  3. Set aside 1 cup of mixture for topping and press the remainder into the bottom of an 8×8 inch baking pan.
  4. Bake at 350 for 12 to 15 minutes.
  5. In the meantime, blend sugar and cream cheese until smooth.
  6. Add egg, milk, lemon juices and vanilla and beat well.
  7. Spread over bottom crust and sprinkle with the 1 cup mixture reserved for topping.
  8. Return to oven and bake for additional 25 minutes, until crust is golden and filling firm.
  9. Cool and then chill thoroughly before cutting into bars.
  10. Recipe may be doubled and baked in a 9×13 inch pan.
