Cheesy Brats and Potato Soup -- A Pinch of Joy

Thick cheesy soup, chunky potatoes, flavorful brats topped with a handful of cheese – very good! Bytes Bites: Quick and easy recipes for those who like to eat well but not spend time in the kitchen.

  • 5 or 6 brats, cut into ½ inch pieces and browned (about 1 and a quarter pounds)
  • 3 medium potatoes, peeled and cubed (about two cups)
  • 1 tablespoon dried minced onion
  • 1 small red bell pepper, seeded and diced
  • 2 cups cheddar cheese,shredded
  • 1 10 ounce can cream of mushroom soup
  • 2/3 cup water
  • Additional cheese for garnish, if desired.

Instructions

  1. Place all ingredients into slow cooker.
  2. Cover and cook on high for four hours or low for 6 hours until potatoes are fork tender.
