Dilly Green Bean Salad

Dilly Green Bean Salad -- A Pinch of Joy Colorful, festive and oh so good (and healthy!)

This colorful salad is a festive and refreshingly different addition to a holiday meal, a summer potluck or just because . . .

Ingredients

Units Scale
  • 2 10 ounce packages frozen green beans
  • 1/2 cup white vinegar
  • 2 tablespoons vegetable oil
  • 2/3 cup sugar
  • 1/2 cup red pepper, diced small
  • 2 Tablespoons white onion, diced small
  • 1/2 heaping teaspoon dill

Instructions

  1. In small saucepan, whisk together vinegar, oil and sugar. Boil for 3 minutes. Add dill. Set aside to cool in refrigerator.
  2. Cook green beans according to directions, subtracting a minute or two from cook or microwave time so beans remain firm. Cool in refrigerator.
  3. Dice pepper and onion and set aside until the beans and dressing are cool, about 2 hours.
  4. Mix dressing, beans, pepper and onion together. Stir gently and do not overmix so as not to break beans or make them mushy.
  5. Let set in refrigerator 3-4 hours — or better, overnight for flavors to meld.
  6. Serve cold.
