The Ultimate No Bake Cheesecake

- 1½ cup graham cracker crumbs
- 2 tablespoons sugar
- 6 tablespoons butter melted
- 16 ounces (2 8oz packages) cream cheese, softened
- 11/2 teaspoons vanilla extract
- ½ teaspoon lemon juice
- 1 cup powdered sugar
- ½ cup sour cream
- ½ cup heavy whipping cream
- If not using boxed graham cracker crumbs, crush 11 graham cracker rectangles in a plastic bag using a rolling pin or flat object.
- Melt butter in microwave for 20 to 30 seconds
- In medium bowl, combine thoroughly the crushed graham cracker crumbs, sugar and melted butter.
- Press mixture into bottom of pan and set aside.
- In large bowl, mix together the softened cream cheese, lemon, juice, vanilla extract and powdered sugar until mixture is light and fluffy.
- Add sour cream and whipping cream. Beat until mixture is very thick and creamy. Spread filling evenly into crust.
- Cover and refrigerate for at least four hours or overnight.
- Serve plain or with fresh fruit.
