Serves: 12 servings
  • 10 eggs, beaten
  • 4 cups cottage cheese (2 16 ounce containers)
  • 4 cups shredded Monterey Jack cheese (2 8 ounce packages)
  • ¼ cup butter, melted
  • ½ cup all-purpose flour
  • 1 teaspoon baking powder

  1. Preheat oven to 400 degrees F.
  2. Prepare a 9 x13-inch baking dish by spraying with cooking spray.

  4. While sausage browns, whisk eggs in a large bowl. Add cottage cheese, Monterey Jack cheese, butter, flour, and baking powder. Mix together all at once.
  5. Cut sausage into bite sized pieces. Spread browned sausage on the bottom of the prepared baking pan. Pour mixture evenly across the sausage layer.
  6. Bake in the preheated oven for 15 minutes. Then reduce heat to 350 degrees F and continue baking about 30 minutes more. Top should be lightly golden and the edges a light brown. A knife inserted into the center of the casserole comes out clean when done.
