Lemon Cookies with white chocolate chips

A light lemon flavor combined with creamy white chocolate and a crisp chewy texture, these cookies will bring compliments every time you serve them!

  • 1 cup butter, softened
  • ½ cup sugar
  • ½ cup brown sugar
  • 1 large egg
  • 1 teaspoon lemon juice OR ½ teaspoon lemon extract
  • 1 teaspoon vanilla extract
  • 2 ½ cups flour
  • ¾ teaspoon baking soda
  • ½ teaspoon salt
  • 2 Tablespoons fresh lemon zest
  • 11 ounce bag white chocolate chips (about 2 ¼ cups)
  1. Preheat oven to 375 degrees.
  2. If using fresh lemon, zest lemon peel with small grater. Cut zested lemon in half and squeeze 1 teaspoon lemon juice, if desired.
  3. Cream butter and sugars with mixer until light and creamy. Add egg, lemon juice and vanilla and mix well.
  4. Whisk dry ingredients lightly together in small bowl and then add to butter mixture gradually until combined. Add lemon zest and white chocolate chips, stir until well distributed.
  5. Use a cookie scoop or roll dough into balls about 1 – 1 ½ inches in diameter. Place on lined cookie sheet about 2 inches apart and slightly flatten top of ball.
  6. Bake in preheated oven for 10-12 minutes until lightly golden on bottom. Cool for five minute before removing from cookie sheet to cooling rack.
