Fruit and Curry Chicken Salad

Curry provides a delicately unique flavor to chicken salad filled with apples, grapes and raisins. Everyone who's eaten it raves over it!!

Serves: 6 servings
  • 2 cups cooked and diced chicken breast
  • 1 stalk of celery, cut
  • 4 green onions, chopped
  • 1 apple, cored and diced (preferably sweet as Delicious or Gala)
  • ⅓ cup golden raisins or original craisins
  • ⅓ cup seedless green or purple grapes, halved
  • ½ cup pecan pieces
  • ½ tsp curry powder
  • ¾ cup mayonnaise
  • Pepper to taste
  1. Mix together mayonnaise and all other ingredients, except the chicken.
  2. Add chicken. Folding in gently will maintain chicken pieces if you plan to serve this as a stand alone dish. Stirring more vigorously will break the chunks apart somewhat resulting in a more uniform texture if you plan to serve on a croissant or other bread.
  3. Chill several hours, overnight is even better, to develop the full fruity flavor.
