Creamy Classic Eggnog

If you love the rich, creamy taste of classic eggnog, but don’t want to use raw eggs, this recipe is for you. For adults-only, add rum, bourbon, or cognac to taste.

Ingredients
  • 12 eggs
  • 1 ¼ cups sugar
  • 4 cups whole milk
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground nutmeg
  • 2 cups evaporated milk
  • 2 cups half and half
Instructions
  1. Combine eggs and sugar in a medium bowl. Whisk until thoroughly combined and color is even.
  2. Pour whole milk in medium saucepan. Add vanilla, nutmeg and egg mixture. Whisk lightly to combine.
  3. In a separate bowl, mix evaporated milk with half and half until combined.
  4. Heat egg mixture in saucepan over medium-low heat. Stir constantly to prevent milk scorching. When mixture reaches 160 degrees on a candy thermometer, remove from heat and slowly whisk in evaporated milk mixture.
  5. Add more sugar or nutmeg, if desired, before transferring to an airtight container. Refrigerate overnight or until thoroughly chilled.
  6. Serve in mugs and garnish with whipped cream, cinnamon sticks, or a dash of nutmeg. Splashes of rum, bourbon or cognac optional
