Spicy Pumpkin Bread
 
 
A light bread with a deep and gently spicy flavor.
Serves: 2 loaves OR 24 slices
Ingredients
  • 4 eggs
  • 1¾ cups sugar
  • 1 cup oil
  • 1 15 ounce can of pumpkin puree
  • 2 cups flour
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon nutmeg
  • 1 teaspoon cinnamon
  • ½ teaspoon allspice
  • ½ teaspoon ground cloves
  • 1 cup nuts such as walnuts or pecans – optional
  • 1 cup golden raisins - optional
Instructions
  1. Beat together eggs, sugar, oil and pumpkin until light and fluffy.
  2. Add dry ingredients and mix thoroughly.
  3. Spread batter in two 5x8 loaf pans
  4. Bake at 350 for 45-60 minutes, until toothpick inserted into middle comes out clean.
  5. Remove from oven and let bread set in pan for 10 minutes on rack before removing to cool.
