Banana Strawberry Blueberry Smoothies -- A {inch of Joy

What do you do with a bag of bananas? Make Banana Strawberry Blueberry Smoothies.  One of the little groceries in town is a great place to find unexpected bargains. Last time I was there, they had just set out bags of perfect golden yellow bananas. I brought one of the bags home with me.   I made Peanut Butter Banana Ice Cream earlier.  Time for a late afternoon snack -- refreshing smoothies it is. I had already sliced and frozen two smallish bananas.  I covered a cookie sheet with parchment paper, dropped the quarter inch thick banana slices on so none touched each other and set the cookie sheet on top of the bottom pullout drawer.  It only took a couple of hours to freeze the bananas.  I shook them off the parchment paper into a measuring cup.  One cup exactly. Elvis Cookies -- A Pinch of Joy

A special cookie in honor of the King.  Elvis Presley was famous for liking peanut butter and ‘nanners.  Probably chocolate chip cookies, too -- because who doesn’t like chocolate chip cookies???  But I’m not so sure about bacon and pretzels.  He may have liked them.  Or not.  Maybe as a snack and a part of breakfast, respectively.  The record seems to be quiet on that one.  Still someone thought they ought to be part of the Elvis Cookie.  So there you are. He was famous for a few other things too.  Upsetting the older generation for one thing.  So I hear.  But then the older generation is always getting upset about something.  "Some people tap their feet, some people snap their fingers, and some people sway back and forth. Cherry Banana Fruit Pie

Cherry Banana Fruit Pie -- aka Out of This World Pie -- A Pinch of Joy

My sister Vee contributed this pie to Thanksgiving dinner.   Soo good that I asked if I could share with y'all.   Cherry Banana Fruit Pie is one of her go-to recipes.  Easy to make because you only need to bake the refrigerated pie shells according to directions and stir together the filling while the shells cool.  Pour the filling into the shells and pop in the refrigerator until time to eat.  So good that the recipe she uses, titles it "Out of this World Pie".    The combination of fruit is a little unusual but that is part of it's charm.  Because the pie is refrigerated it makes a great summer dessert.  But don't save it for any one season.  Fruitiness is good anytime.
