Today's post is a Bytes Bite - where Bytes shares his tips for quick and easy meals. I like having food that's easy to grab and microwave. I've made a pile of Burritos and kept them in the fridge to eat whenever I wanted. Making burritos at home are cheaper than buying the frozen eight packs. If you don’t mind spending the time. Or making a mess. There are three key things to remember when making burritos. First, don't over fill them. Tortillas have a capacity limit, And it’s smaller then you think. If you go over that limit then you just made a mess. A sure sign you over filled is having a hard time folding and rolling. Burritos are easy to roll when you’ve got the right amount of fillers. It’s one of those things you get with practice. Second, use water to seal it up. If ... [Read More]

How to Make a Boiled Omelet
Today's post on how to boil an omelet is a Bytes Bite, written and photographed by Bytes. If you are looking for easy and healthy ideas for quick cooking and clean up, this fills the bill! When I’m cooking for myself I often go for a utilitarian approach. Find the simplest things to cook, eat, and clean up. Something that can be prepped a few days in advance and be ready to cook in just a few moments is a bonus. Something I do every once in a while are Boiled Omelets. I know a “boiled Omelette” sounds weird. But it’s the simplest way to explain how to make these omelettes. It’s something that I also use for camping or feeding a large number of people who are wandering in to eat a few at a time. The advantages are numerous. For starters as long as there is water in the pot the ... [Read More]
Grilled Pork Chops with Sauteed Apples
A quick and easy recipe from Bytes! This one is super fast! You'll need one medium pork chop per person. A medium chop is 3/4 inch to 1 inch thick. The ones Bytes used were about the size of my hand -- maybe three inches across by about five inches long. Grilling time is 5 to 6 minutes on each side. The apples also take about 10 minutes to cook -- no need to peel, just quarter, core and slice. If your grill has a side burner, this goes really quickly. Or you can cook the apples ahead of time and warm them just before serving with the finished chop. Use whatever apples you have on hand, a crisp apple like Gala or Fuji is good. Another Bytes' Bite --a meal that is quick to prepare and clean up and move on to the evening’s activity! Grilled Pork Chops with Sauteed Apples ... [Read More]

Bytes has developed his own repertoire of recipes that are quick, easy and tasty. He offered to share some of them with you because we all can use a quick and easy dinner that is super yummy --- a meal that is quick to prepare and clean up and move on to the evening’s activity. Or in this particular case so I can keep caulking and painting and caulking and painting and caulking. . . . . . Here's another recipe in a (sort of random) series titled “Bytes Bites”. Actually it's a two-fer because you'll get two meals out of this -- really a win-win!!! Egg in ‘Tater — Cheesy Egg Stuffed Potato Print A meal in a baked potato shell topped with creamy, melty cheese -- plus a delicious fritata variation for the next day! Serves: 1 plus Ingredients 1 baking potato, scrubbed ... [Read More]
Maple Bacon Pot Roast — Slowcooker
Maple Bacon Pot Roast -- my Mother's Day Gift. Before Wheels and I were married we talked about the things we wanted for our children. One item on that short list was to teach them how to be self sufficient. Wheels share of that goal was to teach our children things like how to change a tire and how not to get lost. (Neither of which belonged on my side of the list. I still can’t change a tire – don’t tell the kids! I can argue with the GPS, though.) My share was to teach our children things like how to cook a meal and do their own laundry. (Let it be noted that Wheels does a great job at those self sufficiency things.) And that is why, when Mother’s Day rolls around I only want one gift. A homecooked meal that I don’t prepare. This year Bytes selected this dressed ... [Read More]
Slowcooker Cheesy Brats and Potato Soup
Thick cheesy soup, chunky potatoes, flavorful brats topped with a handful of cheese – very good! Bytes made this cheesy good potato and brats soup for supper on a cold, rainy evening recently. (It’s almost May, folks! And we’re still eating hot soup to warm the soul!) If there are leftover brats in the refrigerator, or if you purchase precooked brats, you can skip the browning and just put the sliced brats into the slow cooker. The red pepper provides a bit of color, as well as flavor. You can substitute green peppers. Or Bytes used a yellow pepper for this bowl since that was what in the refrigerator. One carrot, shredded or sliced diagonally, could also be substituted for color, if peppers aren’t available. No extra salt is added since the brats and soup have enough to flavor ... [Read More]
