Baked Spaghetti - A Pinch of Joy Comfort food in a 9x13 pan!

What’s for lunch?  A big pan of baked spaghetti.  Or Pasketti as Bytes’ Big Brother used to say.   The whole family will love it!  Layers of pasta, meat sauce, sour cream and cheese – comfort food of the highest order! The number of servings will depend on the appetites at your house.  It makes 8 large servings, which will serve the three of us with two man-sized servings (and one regular serving for me) for TWO meals.  Two littles usually ate the equivalent of one of the 8 servings.  Which means enough for the man sized eater, two littles and one regular serving.  The point?  You may very easily get TWO meals for the effort in making one!  And that’s a bonus in my book. Creamy Wild Rice and Chicken Bake -- A Pinch of Joy

Creamy Wild Rice and Chicken Bake is delicious, filling comfort food.  It is easy to assemble in about 5 minutes.   Make the rice mixture in the morning to refrigerate with the thawed chicken in a separate bag.   The minute you walk in the door, put the chicken on top of the rice, add the slivered almonds and it is ready to pop in the oven.  Sit down for the next forty five minutes or put in a load of laundry, clean the cat box, referee homework and sit down for five minutes! Whatever you need to do!  With ten minutes left on the timer, fill bowls with a salad mix from a bag, microwave a steam in the bag vegetable and set out a plate of cookies.  Very happy tummies for not much time invested. Chicken spaghetti is a versatile dish. 1) It can easily handle add-ins, like a 10 ounce package of frozen mixed vegetables or 8 ounces of sauted mushrooms 2) Can be wrapped and frozen for up to six months for make ahead meals, before or after baking. 3) Can be made ahead and kept covered and refrigerated for two days before baking – great for making in advance when you’ll have guests. 4) It’s perfect for a potluck – creamy, cheesy chicken and spaghetti will please everyone 5) Bake in disposable pans for a take in meal when someone is sick or in need. 6) Package in individual serving sized microwavable containers for a weeks worth of lunches or to warm when the family schedule is crazy.   A hardworking dish that everyone loves.  Serve with vegetable salad for a complete meal. A yummy way to use leftover holiday turkey is to make Creamy Turkey Tortellini Soup!  Or use chicken for Creamy Chicken Tortellini Soup!   A hearty, filling soup that is a meal by itself because it has meat, pasta and veggies in one flavorful, nutritious pot!   Creamy, warm comfort food on a chilly day!  When I ran across the original recipe, it was instant “oh that sounds good.”  Well, it wasn’t.  Have you ever had one of those epic fails?    But it was intriguing enough that we ate the whole huge batch, trying to analyze what made it such a failure and what could be done to make it better.  Even more intriguing because Wheels and Bytes are usually from the “inhale and move on” school.   You get the improved and downsized version and I hope you like it as much as we do!  Because we ...
