Cookie Exchange

Cherry Almond Chews

Cherry Almond Chews -- A Pinch of Joy

Cherry Almond Chews topped with bright red cherries are festive chewy cookies. They are the perfect choice for a cookie exchange – pretty, chewy and won’t fall apart with handling. They also freeze well so you can make them ahead of time. Bonus! Resist the urge to make these cookies bigger than a teaspoonful. Keeping them small allows the cherry to be the star it deserves. Cutting the maraschino cherries in half is the most time consuming part of this recipe – put a whole cherry on top and solve that problem!   However you choose, just relax and enjoy the whole process – these cookies are worth it! Pineapple Walnut Cookies

Pineapple Walnut Cookies -- A Pinch of Joy

Pineapple Walnut Cookies shout surprise! The pineapple is not a list topper when you are thinking of cookie ingredients. The bits of pineapple bake sweet and a little chewy, a tasty second surprise. Fruitcake Cookies

Fruitcake Cookies -- A Pinch of Joy

Fruitcake Cookies studded with candied citrus rinds, maraschino cherries, nuts and a symphony of spices  -- truly stellar!!    I love fruitcake. I confess I feel lonely in this obsession sometimes – especially with the jokes-- but there must be other fruitcake lovers somewhere.   (Aren’t there? Please??!)  True, there are good recipes and bad recipes and some commercial fruitcakes are not worthy of the name. Still I’ll gladly sample and discard the bad in order to find and savor the good fruitcake!  This is the good -- and in just the right portion! Fruitcake cookies go together quickly in the order given. Mix the spices with part of the flour and they will be evenly distributed in the cookie, with no hot spots of nutmeg or cinnamon. Mixing the fruitcake bits of candied citrus peel and ... [Read More]
