Cranberry Pineapple Salad is a kid friendly addition to holiday dinners. The addition of crushed pineapple and diced apples in raspberry gelatin take away the signature tartness of the cranberry. Easier for kids and people who aren’t into tart – like me – to eat. I have a tart reflex. One bite and my face just folds – no way to hide it. On the other hand this is not overly sweet either – but just right. Cranberries are also healthy. Cranberries are one of the top antioxidant-rich foods, containing more than other superfoods – including pears, grapes, apples and strawberries. Antioxidants help prevent or stop cell damage. For this reason, you can serve them any time of year – don’t wait for holidays! This salad is also versatile in the ways you can serve it. I like the minis ... [Read More]
Cooking for a Crowd
Lemon Ooey Gooey Bars
With the tang of lemon, the rich creaminess of the filling atop a thick crust, finished with butter crumbles Lemon Ooey Gooey Bars is a baker’s reward! Since it makes 16 servings, it is a good dessert for a potluck or serving a large group. It always disappears quickly. It takes about 20 minutes to make this and another 35 to bake. Cooling is the hardest part. Restrain yourself for a couple of hours and you will be so happy you did. Just not burning your tongue is a good thing, but the real favor you’ve done yourself is the enjoyment of the flavors and textures on that unburned tongue. Quick Scrambled Eggs and Bacon for a crowd
Quick scrambled eggs and bacon for a crowd came from celebrating a college graduation this weekend with an open house. We began with breakfast for first comers, had mid-day dinner and ended with afternoon snacks for the littles. All day eats! Everybody contributed a dish or two. For breakfast we had pastries, coffee cakes, yogurt parfaits and melon slices. I wanted a bit of protein to balance the meal so we invented Quick Eggs and Bacon on the fly. Although we were probably not the first to execute the concept, we had a perfect product! I took a pound of bacon, cut the slices in half so that they were about four inches long. I browned them in a skillet while sister in law Deb broke open a dozen eggs. She whisked them thoroughly then added a quarter cup of milk, salt and pepper. ... [Read More]
Super Delicious Big Batch Chocolate Chip Cookies
In high school, my brother Jay started talking about the Super Delicious everything in them but the kitchen sink, absolutely wonderful cookies he ate at work. .Jay did farm work, working hard and long hours, eating with the family to save time.
