Chocolate Chip Cinnamon Crisps are quick, easy and quite straightforward to make. You’ll be glad you made these! Tips for less experienced bakers: Let the butter soften until room temperature by letting it set on the counter for 30-60 minutes ahead of time. Cutting the stick of butter into slices will help it warm faster. OR do the microwave cheat, put in the microwave at 50% power for 15-20 seconds. Room temperature butter will almost “take your fingerprint” when pressed with an index finger. The butter will still be firm enough to resist your touch, but soft enough to leave the imprint of your finger. If you press and your finger actually sinks into the butter – too soft. Be sure to pack the brown sugar – that is, press it tightly into the half cup measure until it is level ... [Read More]

Minty Christmas Cookies
Minty Christmas Cookies are fun! Fun colors, fun and easy to make and decorate, fun to make with littles. Best of all, they are fun to eat! Use the paste colors because they give deeper color without adding extra liquid. It’s no secret that I am not good at dipping things in chocolate! (Remember? How not to make peppermint patties and Chocolate covered Cheeseballs) I frosted half of each cookie with the melted chocolate instead of dipping. Requires less chocolate – saves $ and lowers the carb count a tiny bit and is a whole lot easier! Melt about half the given amount if you do this. Have fun! Toffee Crisps
Toffee Crisps seemed a bit unusual to me in that it was a baked cookie recipe using graham cracker crumbs for thickener and condensed milk for sweetener. It is a very goooood combination!! If you crush the graham crackers, you’ll need about 32 squares to make 2 cups. That’s about the most complicated thing in making these delights. Very quick and easy. The dough is thick and can be shaped into a relatively uniform circle very easily as you push them off a tablespoon., although a cookie scoop makes the job easier. I’ve also rolled them into balls between the palms of my “very clean” hands – but that is not necessary. What IS necessary is keeping a close eye on the baking time, as these go from brown to overdone very quickly. Toffee Crisps Print Prep time 10 mins Cook ... [Read More]
Almond Coconut Crunch Cookies
Crispy, crunchy cookies made with coconut, almonds and chocolate chips are a delightful treat any time of year! We always have almonds on hand to make Almond Coconut Crunch Cookies because we eat a handful every day with yogurt for an afternoon snack. I coarsely chop the almonds for this recipe in a mini processor. The measurement seems to come out about the same whether I measure before or after chopping. I would think that slivered or sliced almonds sold in stores could be used for this recipe to save time as well. Chocolate chips – use your favorite. The original recipe called for milk chocolate but the first time I made the recipe, there was only semisweet chips available. So I’ve always used them ever since – until the time there was only dark chocolate chips available on the ... [Read More]
