Fabulous Fudge is so easy to make it's almost embarrassing.   This quick and easy recipe came to me literally on a plate. A plate with three kinds of fudge dreams to delight the tastebuds.  And, such a sweet friend, she included the basic recipe!  Make it once and it will become your signature gift, too. Halloween Fudge -- A Pinch of Joy

Halloween fudge is an elegant treat with its smooth chocolate base tinged with subtle orange flavor. It’s a quick last minute treat that you can make in a few minutes to take to the office, to say thanks to a neighbor or just because. You’ve probably guessed by now that I am a fudge fanatic – any excuse to have fudge!! You can use chocolate melts or semi sweet chocolate chips for the chocolate layer. A 12 ounce bag of chocolate chips is the equivalent of 2 cups – no measuring needed. I’ve always found orange candy melts on the shelf, but you could also use food coloring if all you can find is white melts. If you want a darker orange, add a little extra paste food coloring. Mint Chocolate Fudge - A Pinch of Joy

Mint Chocolate fudge for St. Patrick’s Day.  Any excuse for chocolate!  Mint is the bonus. The green gives it street cred for St. Paddy’s Day – though it also fits spring, Easter and the whole of the Christmas season, New Year’s, Mardi Gras—yeh!   And this is the very best fudge recipe ever!  Triple winner!    I like this recipe because it is so quick and easy to make.  Gather the ingredients and equipment, melt the chips in the microwave, layer, swirl – done!  Of course, you have to exercise some patience during the 2 hour set up time in the refrigerator.  You really don’t have to watch it – unless you are guarding it from little ones creeping in with spoon in hand.  (Yes, I have had to do that!  And they weren’t so darn little either!)    Be sure to line the 8x8 pan.  It will help ... Candy Corn Fudge

Candy Corn Fudge . . .   Just another pretty fudge. Candy Corn Fudge . . . . Just because I can. The coloring I used was Wilton’s gel and to give it a strong color I scooped out a bit with the edge of a teaspoon.   I  mixed the coloring into the sweetened condensed milk first before adding it to the chips to make the color more even.  I prefer Ghiradelli white chocolate chips to other brands.   Soften the white chocolate and shortening in the microwave for 30 seconds at 50% power.  Chips will hold their shape until stirred so don't microwave again until you stir the chips and shortening together.  If they are not soft enough to combine, then microwave again in 15 second bursts at 50% power until most chips are melted.    Add the colored milk to the melted chocolate, stirring gently ... White Chocolate Caramel Swirl Fudge - A Pinch of Joy

White Chocolate Caramel Swirl Fudge -- I needed something to round out a plate of Fabulous Fudge for a party and thought this would be a good contrast to the semi sweet chocolate.  But you know me ---quick and easy – so that’s the direction I naturally took when I made this recipe.  With a change and a tweak and in the microwave.  And, of course, I have to share . . . I've found this works best with Gharadelli chips, although Hershey's and Nestle's work well.  For some reason the store brands don't seem to melt evenly -- but you might have different results.  Use butter instead of margarine - as any moisture in the margarine will affect how the candy sets up.   It will take at least two 90 second intervals at 50% power for the chips to lose their shape and begin to melt.
