Chocolate Covered Peanut Butter Balls -- a yummy takeoff on a certain peanut butter filled chocolate cup. They are easy to make with only five ingredients and go together very quickly. Plan for time - and space in the freezer - so they set up firmly before dipping in melted chocolate. You can use melted chocolate chips for dipping. I prefer the melting chocolate wafers with a bit of coconut oil added. I've also used almond bark with coconut oil. Practice does help! Cobb Salad with Ranch Dressing
Cobb salads are a favorite in our house! They usually make an appearance once a week like clockwork, especially in summer. Crisp Romaine lettuce topped with a variety of healthy protein and drizzled with your choice of creamy Ranch Dressing. Cobb Salad fits deliciously into both Keto and Low Carb ways of eating. They are so easy and quick to put together, too. Avocados all end up on Wheel's bowl -- it's a texture thing! -- but he doesn't mind because he loves them. Fresh limes in the Great Plains are usually reasonably priced only in season, but they are a nice alternative for dressing. Making your own Ranch dressing lets you control the ingredients for both health and flavor. Buttermilk gives the dressing its own little tang, but it is not something I regularly have on ... Air Fryer Bacon
Air Fryer Bacon. I’ve been experimenting with different items in the air fryer I won in a silent auction. When I heard of bacon in the air fryer, I jumped at the idea. One of the things I like about the air fryer is consistent results because the time and temperature is controlled. Another thing I like is that things turn out crispier than other methods of cooking. The airfryer is essentially a small convection oven in which streams of hot air move over and around the food and create the same conditions that makes fried food so delicious. Bacon sounded like the perfect thing to make in an air fryer. I was a little nervous since bacon was not mentioned in the material that came with mine. So a little research on line where I found cooking time and temperature listed and not much ... [Read More]
Spicy Roasted Cauliflower
Pin for future reference!! Spicy Roasted Cauliflower is a perfect side dish for a quick and easy weeknight meal. It takes just five minutes to cut and toss it all together. Pop it in the oven for a flavorful, low carb side that pairs well with everything from poultry to beef and pork roasts. You can make the recipe as is. Or, like me, cut the red pepper flake quantity in half ( or omit it all together.) And use about half the garlic. Because I am a spice wimp! At which point you will have Quick and Easy Parmesan Roasted Cauliflower! At the store, choose a head of cauliflower that is uniform in coloring and free from browning. The cauliflower should be firm, heavy for its size with dense florets. The leaves should be fresh and green, a sign that the cauliflower was recently ... [Read More]
Quick Scrambled Eggs and Bacon for a crowd
Quick scrambled eggs and bacon for a crowd came from celebrating a college graduation this weekend with an open house. We began with breakfast for first comers, had mid-day dinner and ended with afternoon snacks for the littles. All day eats! Everybody contributed a dish or two. For breakfast we had pastries, coffee cakes, yogurt parfaits and melon slices. I wanted a bit of protein to balance the meal so we invented Quick Eggs and Bacon on the fly. Although we were probably not the first to execute the concept, we had a perfect product! I took a pound of bacon, cut the slices in half so that they were about four inches long. I browned them in a skillet while sister in law Deb broke open a dozen eggs. She whisked them thoroughly then added a quarter cup of milk, salt and pepper. ... [Read More]
Salmon Patties with Creamy Dill Sauce
Salmon patties are a favorite way to take advantage of excellent nutritional value offered by salmon, especially Omega 3 and protein. While fresh salmon is available in many areas only on a seasonal basis, canned salmon is available all year round and also wins over fresh or frozen cost wise. Removing the bones from canned salmon is an option, however leaving them in will add calcium and up the Omega 3 fattty acids available. The canning process softens the bones which makes them edible. It is also not necessary to drain canned salmon – just mix all the ingredients together. Make patties in your left hand (if you’re righthanded). Just scoop salmon mixture into the slightly cupped hand and shape with spoon. Add more salmon mixture as needed to make patty uniform depth. Gently ... [Read More]
