Overnight Oatmeal with Sauted Apples -- A Pinch of Joy #Healthy Breaksfast

Add pizzazz to your breakfast with Overnight Oatmeal!   It’s healthy, nutritious and delicious!  I had a bowl of hot oatmeal every morning with raisins and walnuts for a very long time.  When I heard about oatmeal made overnight in the refrigerator and eaten cold I was pretty skeptical.  But we needed something to go with scrambled eggs (protein!)  and the idea of a basic dish with lots of variations kept leading back to  Overnight Oatmeal. Sauted apples were the first version we tried.  Peel, slice and dice an apple and saute it with a tablespoon of butter  in a small frying pan.  Layer the hot apple with the cold oatmeal --- ummm, heavenly.  Great for a leisurely morning.  But there are lots of  add-in and topping options.  Enough to keep your tastebuds excited for a very long time.  ... Pork Tostadas

Pork Tostadas -- A Pinch of Joy.

Pork Tostadas are open faced sandwiches made on a crispy fried tortilla.  Tostada = toasted.  Anything that can go on a taco can also be found on a Tostada.  You know I am a wimp when it comes to spicy and to me Mexican food meant spicy.  Wrong!  How did I find out?   Last spring I noticed our local grocery offered cooking sessions.  Always looking for new dishes and ways to make our meals healthy and varied, I signed up immediately.  I’ve added to our food rotation things like Pork Tostadas and more.   I love it!  For many reasons! Ham and Cheese Mini Quiche without crust -- A Pinch of Joy

This crustless Ham and Cheese Mini Quiche is low on the carb scale – like 3 grams of carbs with 12 grams of protein.  Healthy enough for every day and deliciously handsome and tasty enough for company! Ham and Cheese Mini Quiches work very well as a make ahead and freeze till needed dish.  Great for overnight guests!  Breakfast fit for royalty in a flash and no fuss.  Or thaw one or two overnight and warm in the microwave for a quick breakfast before work or heading off to school.  These cozy little quiches also make a nice dinner with a crisp salad on the side. Overnight Cinnamon Coffee Cake -- A Pinch of Joy Spicy cinnamon sugar atop a light, fluffly sweet dough -- cinnamon rolls without the "roll" and fuss.

Sister Kay introduced  the  family to Overnight Coffee Cake at a family reunion two or three years ago.  Crusty cinnamon  sugar atop a light  sweet dough – sooo good.   She shared the recipe which is still in my to do file.  This weekend we were at sister Vee’s home and were awakened with  the wonderful aroma of baking bread and cinnamon. Vee graciously allowed me to take a picture of the coffee cake to share with you.  Well, actually I said good morning, saw the pan setting on the table,  grabbed a plate from the cupboard, my camera from the bedroom and went out to the front porch to take a picture.   Wheels and Bytes are used to having perfectly good food snatched right out from in front of them for a photo session.  Apparently that’s not the norm in every family!   But they just ...
