Air Fryer Bacon.  I’ve been experimenting with different items in the air fryer I won in a silent auction.  When I heard of bacon in the air fryer, I jumped at the idea.  One of the things  I like about the air fryer is consistent results because the time and temperature is controlled.  Another thing I like is that things turn out crispier than other methods of cooking.  The airfryer is essentially a small convection oven in which streams of hot air move over and around the food and create the same conditions that makes fried food so delicious.  Bacon sounded like the perfect thing to make in an air fryer. Pin for future reference!! Spicy Roasted Cauliflower is a perfect side dish for a quick and easy weeknight meal. It takes just five minutes to cut and toss it all together.  Pop it in the oven for a flavorful, low carb side that pairs well with everything from poultry to beef and pork roasts.  You can make the recipe as is.  Or, like me, cut the red pepper flake quantity in half ( or omit it all together.)  And use about half the garlic. Quick scrambled eggs and bacon for a crowd came from celebrating a college graduation this weekend with an open house.  We began with breakfast for first comers, had mid-day dinner and ended with afternoon snacks for the littles.  All day eats!  Everybody contributed a dish or two.  For breakfast we had pastries, coffee cakes, yogurt parfaits and melon slices.  I wanted a bit of protein to balance the meal so we invented Quick Eggs and Bacon on the fly.  Although we were probably not the first to execute the concept, we had a perfect product! Salmon Patties with Creamy Dill Sauce -- A Pinch of Joy

Salmon patties are a favorite way to take advantage of  excellent nutritional value offered by salmon, especially  Omega 3 and protein.  While fresh salmon is available in many areas only on a seasonal basis, canned salmon is available all year round and also wins over fresh or frozen cost wise.   Removing the bones from canned salmon is an option, however leaving them in will add calcium and up the Omega 3 fattty acids available.  The canning process softens the bones which makes them edible.   It is also not necessary to drain canned salmon – just mix all the ingredients together.    Make patties in your left hand (if you’re righthanded).  Just scoop salmon mixture into the slightly cupped hand and shape with spoon.  Add more salmon mixture as needed to make patty uniform depth.  Gently ...
