Ham and Cheese Mini Quiches work very well as a make ahead and freeze till needed dish.  Great for overnight guests!  Breakfast fit for royalty in a flash and no fuss.  Or thaw one or two overnight and warm in the microwave for a quick breakfast before work or heading off to school.  These cozy little quiches also make a nice dinner with a crisp salad on the side. Leftover ham after a holiday?  Cheddar and Ham Quiche will help you solve the problem of what to do.  Quick, easy and tasty, too. Cooking with evaporated milk is something relatively new to me.  I stopped drinking milk with meals about 3 years ago.  Love cold milk, but it wasn’t returning the love!  No more gallon jugs of milk in the fridge.    I was going through a couple of gallons a week and now half a gallon will last almost three weeks. Smoked Salmon Quiche A Pinch of Joy

 Deep Dish Smoked Salmon Quiche with Dill. I could almost smell the smoked salmon when I found  this recipe in a Quick and Easy Paula Deen’s magazine. So when I saw smoked salmon on sale the deal was sealed. I picked up the salmon and carton of half and half and planned to make it for dinner the next night. Life got in the way. Like two weeks worth.   Tonight was the night I could make this quiche that has been on my mind. Except – well, I’ll tell you what I did and what Paula said I shoulda done.  A platter of these little quiche looks quite elegant on a table for a shower or tea party.   They are surprisingly filling so they are perfect for a small dinner party celebrating Mother’s Day, birthday or other special occasion.  Be prepared as the hostess though.  Do NOT worry when the room goes silent.
