Lemon Pepper Pork Chops are tender, delightfully flavored and a great company dish.   They are so quick and easy to make you’ll add them to the family menu, too. I am always surprised at how quickly this meal comes together.  Serve with colorful vegetables or brown rice and a crunchy salad.    Yummy delicious!!  Even when you don’t put the sauce on because you’re in a hurry to catch the last bit of light for photos before dinner and nightfall. Skillet Lasagna Mexicana

Skillet Lasagna Mexicana is so easy it almost makes itself.  Well, not quite.  But it is an all-ages approved dinner that goes from pantry to table in just about half an hour.  Made from ingredients that are likely already in your pantry and refrigerator, it works wonderfully well on those days you walk in the door with a million things on your mind.  Swoop the ingredients off the shelf, brown the meat and simmer in sauce, cook the pasta, add cheese – and there is one less things to worry about. Chicken and Orzo Skillet

Chicken and Orzo Skillet -- A Pinch of Joy

Orzo and Chicken Skillet is a quick fix with full flavor.  Tender chicken with a whisper of garlic, delicate orzo cooked in broth with healthy zucchini and tomatoes.  On the table in about 30 minutes.  All you need is a hearty salad to make it a full meal.  Maybe a hard roll or a slice of garlic bread, for the bigger appetites. This can be prepped ahead of time. Be sure to choose smaller chicken breasts – about the size of a deck of cards -- so they cook evenly.   Dice the zucchini and bag it in a sandwich or quart bag with the Italian seasoning. I was looking for something familiar with a twist to serve for Bytes’ birthday dinner.  Flipping through a stack of recipes I saw Chicken Piccata  Ummm – don’t think so – sounds like directions for playing piano.  When the same recipe popped up again I took another look.  Oh, it’s chicken with a lemon garlic sauce.  I can do that!  Picatta, loosely translated, means zesty.  This dish has a lemon lilt flavored with fullbodied garlic.  Light but definitely zesty, by whatever name you call it.     I had never noticed chicken cutlets in the grocery store before.  However, they were in the freezer in all three of the grocery stores I frequent.  I spend a lot of time reading labels, but not looking at frozen chicken apparently!   A cutlet is about a quarter inch thick up to about half an inch ...
