It’s been hot and humid the last several days. Something cold and quick is very appealing for snack or a light little dessert. Healthy besides is even better. These Frozen Yogurt Duos fill the bill, with a combination of yogurt flavors and a light crust. So easy to make, the kids can do it! Crush the cereal by filling your measuring cup and then pressing down tightly. Repeat until you have one cup crushed cereal. Melt the butter in the microwave – about 20 seconds works in my microwave. BLT Ranch Burger
First time I made Ranch Burgers, I used ranch dressing out of the bottle. They were moist – just like I thought they would be. That was a good thing. But they were so moist they came apart and slid down into the barbecue flames. Not a good thing. And they were so soft that it was impossible to slide a spatula under them to lift anything off the grill. Really not a good thing! Good idea -- bad execution!! This recipe using dry ranch dressing mix gives the taste and tenderness without the falling apart mess. Save the bottled ranch dressing to replace or supplement your ketchup allotment. Strawberry Lemonade
I’ve heard that when life hands you lemons, you should make lemonade. So I did. Gorgeous strawberry lemonade!! Because my refrigerator has a strange quirk. Whatever is shoved into the upper right hand corner of the top shelf freezes. Weird, huh? This time it was a package of fresh strawberries intended for an absolutely gorgeous dessert requiring perfect fresh strawberries. Frozen crystals and subdued colors were not going to help the gorgeous factor (which in actuality, may or may not, have been marginal anyway! :-) ) So strawberry lemonade it was. I pulled out the Splenda for this one to reduce carbs and calories. I barely brought the syrup to a light boil and stirred just until the Splenda dissolved, which it did very easily.
