Hearty. Cheesy delicious. Filling finger food. Meal in a crust. You'll love Cheesy Beef Stromboli. Plus it is quick and easy! Just beef and cheese - no tomato sauce. Each sentence: one more word than the last. Now it is time to talk about the food! :-) Brown the beef and let it cool. Unless you brown the beef as you buy it and toss it in the freezer in 2 cup packages. (Highly recommended! Especially if you buy on sale!) If you are using beef from the freezer, thaw in the microwave. Add egg and cheese. Grab your favorite cookie sheet and spray lightly with cooking spray. Crack open a roll of refrigerated pizza dough and unroll it on the cookie sheet. Pat out until it touches the edges. Spread meat filling over the dough, leaving about 3/4 inch uncovered on all the ... [Read More]

Savory Chicken Noodle Soup Mix
Savory chicken noodle soup mix is not your grandma's chicken soup even though it tastes just like it! And just like grandma's soup, this makes a healthy, comforting gift -- but so much easier to make. Pair a jar of mix with a can of chicken and it is perfect for a sick friend. A minute or two of measuring water and waiting for the soup to cook is all the effort needed to make four servings of healthy comfort. Chicken noodle soup mix is great for the pantry shelf as well. A healthy no preservative quick lunch or dinner for those really busy days – just add crusty bread and/or a salad. A single college student or young professional would also appreciate this (along with a couple of other mixes!) as a stock the shelf gift. Minimal prep time and there will be 2-4 meals depending on ... [Read More]
Creamy Wild Rice and Chicken Bake
Creamy Wild Rice and Chicken Bake is delicious, filling comfort food. It is easy to assemble in about 5 minutes. Make the rice mixture in the morning to refrigerate with the thawed chicken in a separate bag. The minute you walk in the door, put the chicken on top of the rice, add the slivered almonds and it is ready to pop in the oven. Sit down for the next forty five minutes or put in a load of laundry, clean the cat box, referee homework and sit down for five minutes! Whatever you need to do! With ten minutes left on the timer, fill bowls with a salad mix from a bag, microwave a steam in the bag vegetable and set out a plate of cookies. Very happy tummies for not much time invested. I use Uncle Ben's Long Grain and Wild Rice with a seasoning packet. The package says it will ... [Read More]
Warm and Cheesy Bacon Dip
The hard part of making this warm, comforting bacon cheesy dip is finding a place to hide it so that it can cool a bit. Everybody wants to dig in right away! Good. But too hot to really taste the deliciousness. Put it on a cracker and wave it in the air to cool it. Better. Best -- wait a bit longer until it is Goldilocks “just-right”. No burned tongue and the flavors shine. Easy to make. About 5 minutes and it is ready to pop in the oven. Use only precooked bacon pieces. Look for the brands with larger pieces if you can find them, as they will make a smoother, more flavorful blend. Onion can be omitted or if you want more kick, add another green onion or two. Add pepper, if desired. NO salt as the cheese contains all the salt necessary. Serve with a basket of dippables like corn ... [Read More]
Egg n Bacon Cheesy Melt
Hmmm. . . hot egg salad sandwiches, I don’t know . . . it does have bacon in it though. I clicked over to the blog source with uncertainty. I should have known better. My girl, The Pioneer Woman, came through again. It’s divine, she said. And she is right! Of course, I had to try it to be absolutely sure that it was divine as promised. Her enthusiasm propelled me forward. And we all know, even things divine get changed a bit in my kitchen. The first time I made this I only made half the egg recipe, but spread it over the same number of English muffins. Mmmmm. We savored them this way several times. Then one evening, I made them for a quick supper. I hardboiled the entire dozen eggs, thinking I would be one up to make another half recipe again later in the week. Well, it was such a ... Cheese Broccoli Noodle Soup
Donna asked me if I had ever had a recipe failure. Hmmmm – more than a few! I said I had never been able to make a good broccoli cheese soup even though I'd tried several different recipes. Donna said “I have a recipe that you’ll love and it won’t fail!” She sent me this tried and true broccoli and cheese noodle soup from her recipe box. She was right. It was a hit! I would never have thought of adding noodles to a broccoli cheese soup but it is so good! The unexpected noodles bring it to a “stick to the ribs” category of yummy. She made a note to make sure the noodles are extra fine – around an inch long and smaller than the diameter of thin spaghetti. I did cut the recipe in half to make six servings – one meal for the three of us. And instead of water and bouillon ... [Read More]
