Busy Monday 386

Fall is here without a doubt!  It was 96 degrees on Wednesday and has been in the fifties since with a biting wind and rain.    The butterflies have been swarming around the flowers this week.  Thanks to a butterfly class this past winter, I know the little yellow ones that come in great numbers are sulfur butterflies.  There are a lot of painted ladies, not so many monarchs but it is maybe a little early for them.   It is a delight to watch them!  May you find delightful things this week!  Thanks for stopping by to link your awesome posts! Banana Nut Muffins -- A Pinch of Joy

Banana Nut Muffins are a quick and easy breakfast, a delicious addition to any meal, a tasty snack and a life lesson.  A life lesson??  Muffins are so easy to make that they are often the first baked item beginning cooks learn to make.  A muffin recipe teaches how to follow directions, how to measure ingredients, and other basic cooking skills.   (These are pretty darn good eating however,  even if you are an experienced cook!) Busy Monday 385

Wheels and Bytes are excited to have tickets to the big football game in Capitol City this weekend.  Football is a big deal in this part of the country.  The whole state wears red no matter where they plan to be during the game.  At least half the state packs up and heads east for home games and a bunch travel to every game in or out of state.  Conversations for the following week center on football, the coach, the quarterback and how the team could have done better and --- I just smile.  I understand none of it.  Except the half time band -- that I get!  I'm glad they get to go and are looking forward to it.  I'm glad that you stopped by to share your awesome posts!  Thank you. Slow Cooker Beef Straganoff -- A Pinch of Joy

Beef Stroganoff is a simple dish of meat and mushrooms with a sour cream sauce that literally has been around for centuries.   Eventually it was given the name of the Russian Count Pavel Stroganoff.  Stroganoff, was a celebrity in turn-of-the-century St. Petersburg, a dignitary at the court of Alexander III and a gourmet. He entertained frequently and beef, onions and mushrooms in a savory sour cream sauce became a signature dish bearing his name.   However, his Beef Stroganoff was likely served over potatoes rather than noodles.  Beef Stroganoff has many variations and here is one more! Busy Monday 384

Love these gorgeous fall days!  It has been so pleasant every day that one could easily become spoiled and forget about the wild Plains winters.  There are hints, though,  as trees are turning early and some birds, like robins,  have already migrated. The butterflies are beginning to show up -- also a bit early -- and are swarming around the blue asters. Today I scouted out a spot for a small brush pile hidden behind the big pine trees in the corner of the garden so butterflies and lightning bugs have a sanctuary from winter weather.   Thanks for taking time to stop by our little corner of the ecosystem to share your awesome posts! Apple Walnut Cake

Apple Walnut Cake - A Pinch of Joy A spicy, moist cake chock full of apples chunks and walnuts!

Apple Walnut Cake sings fall with  apple chunks, walnuts and spicy goodness.  Add cream cheese icing and sing Happy Birthday. Which is what we did for Wheels birthday. It was so good  I made another cake --  just because -- a week or so later! I tweaked the amounts of the sugars, reducing them considerably to lower the carb count.  The cake is just right sweet -- enough to complement the cinnamon and nutmeg and not overpower them.  I just googled "complement".   It says "a thing that completes or brings to perfection".  Just exactly the description I was looking for!  Don't bother to peel the apples.  I used my favorite Gala, cutting them into slices and then cutting across the slices to make half inch long chunks.
