2cups potatoes, peeled and cubed
2cups chicken broth
1/2cup sliced carrot
1/4cup onion, chopped
1/4cup butter
1/4cup all-purpose flour
2cups 2% milk
1/2 teaspoon salt
1/4 teaspoon pepper
2cups (8 ounces) sharp cheddar cheese, shredded
1–1/2cups cooked ham, diced
1cup corn
Instructions
Combine potatoes, chicken broth, carrot and onion, in Dutch oven or small stock pot. Bring to a boil. Reduce heat, cover and cook for 10-15 minutes or until potatoes are tender.
Meanwhile, in 10 inch skillet, melt butter.
Whisk in flour, salt and pepper until smooth.
Gradually whisk in milk. Bring to a boil and cook and stir for 2 minutes or until thickened.
Stir thickened mixture into potatoes and chicken broth, stirring until well mixed and bubbly.
Stir in cheese until melted.
Add ham and corn. Heat through. Serve immediately.
