Chocolate and Cream No Bake Cookies

Crazy, easy recipe! Buttery soft and creamy no-bake chocolate cookies.

  • 18 full sheets graham crackers (2 full packages)
  • 1/2 cup sugar
  • 1/3 cup unsweetened cocoa powder
  • 8 oz cream cheese, softened
  • 1/2 cup chopped walnuts

Instructions

  1. Break graham crackers into uneven crumbs.
  2. In a small saucepan over medium heat melt the butter, sugar and cocoa powder, stirring constantly. Pour the melted butter mixture over the cookie crumbs. OR mix sugar and cocoa powder in medium microwave safe bowl and microwave for thirty seconds. Stir melted butter into cocoa and sugar mixture until thoroughly mixed.
  3. Add cream cheese and mix until well combined.
  4. Stir in chopped walnuts.
  5. On the counter, lay a 24-inch long strip of plastic wrap.
  6. Put the cookie mixture in the middle of the wrap along its full length. Roll into a log, about 2 inches in diameter.
  7. Tightly wrap the plastic wrap around the log and freeze for at least 2 hours, or until firm.
  8. Slice log into uniform cookies, ¼ to ½ inch thick, before serving.
  9. Store leftovers in the freezer in an air-tight container.
