These mini cinnamon rolls were fun to make and offered instant reward! Well, not exactly instant but they were ready to eat in about 12 minutes and that’s pretty close to instant in cinnamon roll world. And they are fun to eat and oh so good! Would make a fun addition to an appetizer table. Or a breakfast table. Or with dinner. Or a snack – oh heck, for any occasion, any time! Banana Bread becomes a necessity around here once in a while when the bananas don’t get eaten as quickly as predicted in the grocery store. It’s a classic supply and demand situation. The supply quickly exceeds the demand when schedules change, the supply of other fruit surges or whims of resident banana consumers shift with the Nebraska “breezes”. That’s anything less than 55 miles per hour – which is considered a blizzard force only if accompanied by snow. But that’s another story. . . . Lemon Blueberry Scones
I made Lemon Blueberry Scones recently. Houseguests took us out for a delicious and lingering breakfast and no one was hungry come lunch time. We waited until about 2:30 and had tea instead. Sliced melon, strawberries and other fruit, some cheese and deviled eggs made up the menu, but the star of the show was Lemon Blueberry Scones. Light and flaky, full of delectable blueberries and a whisper of lemon topped with sweet lemon glaze -- mmmm! Cut the butter into the flour and other dry ingredients quickly with a pastry cutter. An expectant hush falls over the crowd. Eager anticipation is barely contained with fidgets and twistings for a better view. The air is full of sweet perfume and warmth. As the longed for arrival comes into view, a murmur begins to arise. What would they find? What would it look like? You’ll see, whispered those who had witnessed the miracle before. You’ll see! And then one nugget was plucked from the rest and held aloft for all to see. Carefully an end was removed from the fragrant brown oval. A spontaneous gasp from the gathering. It was true! The tomb was empty! The miracle lasted long enough for the teacher to swiftly distribute the remaining nuggets without fuss and disagreement.
