Italian Chicken Breast is a Quick and Easy recipe that is delightfully delicious and so easy to make that it will become a regular on the menu. Thaw the chicken breasts in the refrigerator overnight.  Yes, you can thaw them in the microwave, if you forget.  But it's one less hassle if you think ahead and throw the bag of frozen chicken breast in the refrigerator overnight.  You can get right to cooking after work.  The package of chicken breasts I used were wildly varied in size.  Slice them in a way that will give you relatively uniform thickness.  I laid the breasts on the cutting board and made slices abut 3/4 inch thick.  Those will cook easily with about 5 minutes on each side.  Be sure the oil is hot before adding the meat, dredged in egg and crumbs.  This will make a quick and ... Creamy Tortellini Soup -- A Pinch of Joy Quick and Easy

Creamy Tortellini Soup is worth a regular spot in anyone’s lunch planning rotation.  The flavor is so creamy and delicious it’s hard to believe that it goes together so quickly easily.  Or that it has only 12 carbs! I often think of soup as a great place to use leftovers.  A half cup of any kind of vegetable – in it goes.  A bit of leftover meat – dice it up and toss it in.   Half a baked potato – chunk it up and chuck it in.  Not this soup!  It’s already well balanced with great flavors.  Don’t mess with this by adding something more! Baked Spaghetti

Baked Spaghetti - A Pinch of Joy Comfort food in a 9x13 pan!

What’s for lunch?  A big pan of baked spaghetti.  Or Pasketti as Bytes’ Big Brother used to say.   The whole family will love it!  Layers of pasta, meat sauce, sour cream and cheese – comfort food of the highest order! The number of servings will depend on the appetites at your house.  It makes 8 large servings, which will serve the three of us with two man-sized servings (and one regular serving for me) for TWO meals.  Two littles usually ate the equivalent of one of the 8 servings.  Which means enough for the man sized eater, two littles and one regular serving.  The point?  You may very easily get TWO meals for the effort in making one!  And that’s a bonus in my book. Crock Pot Lasagna

Crockpot Lasagna -- A Pinch of Joy

I mooshed several different Crockpot Lasagna recipes together to come up with another crockpot special to feed the work crew during the kitchen remodel! I would make this crock pot lasagna again – but flavor it up a little bit.  Normally we don’t do spicy, but this was a little bland for us.   Since I did not have a stove, I used ground beef that I browned before freezing and added dried onion flakes and minced garlic from a jar.   I think this would be better with a small/medium onion chopped and sauted with about twice the garlic I used.  It probably would also benefit from using a more flavorful jarred sauce so use your favorite instead of the plain I had.  Or add a teaspoon of Italian seasoning.  Remember to keep the meat and sauce layer thin enough to sort of see the noodles beneath ...
