Hearty, filling and delicious, great for a busy day breakfast, this dish is low carb and a good source of protein. It’s the perfect solution for what to feed a group for breakfast. Pop it in the oven, prepare coffee, add bakery cinnamon rolls (or your own made ahead) and/or slices of melon and you have a memorable breakfast for a holiday or overnight guests. Slabs of Cheesy Baked Egg and Sausage make a good brinner dish too. You know – brinner – breakfast for dinner. It is satisfying in a stick to your ribs, comfort food kind of way.
To make ahead, mix whisked eggs, and cheeses together and refrigerate overnight. Brown sausage or bacon and refrigerate. Add melted butter, flour and baking powder the next morning before pouring into prepared baking pan and popping in the oven. The leavening agents in the baking powder are activated by liquid so they need to be mixed in at the last minute for best results. You can add extra zip by adding a small container of green chiles, or two to three chopped green onions. We like it with just the sausage adding flavor. You can use bulk sausage, browned, or sausage links, browned and chopped into bite size pieces – I use the whole package of links. I haven’t tried it, but you could also substitute bacon for the sausage. Cut half a package of bacon into one inch pieces before browning and layer in the bottom of the pan. Or break the crisp bacon into smaller pieces and stir into the cheese egg mixture.

Ingredients
- 10 eggs, beaten
- 4 cups cottage cheese (2 16 ounce containers)
- 4 cups shredded Monterey Jack cheese (2 8 ounce packages)
- 1/4 cup butter, melted
- 1/2 cup all-purpose flour
- 1 teaspoon baking powder
- 1 7 ounce package sausage links, cooked and chopped
Instructions
- Preheat oven to 400 degrees F.
- Prepare a 9 x13-inch baking dish by spraying with cooking spray.
- Brown sausage in medium skillet over medium heat.
- While sausage browns, whisk eggs in a large bowl. Add cottage cheese, Monterey Jack cheese, butter, flour, and baking powder. Mix together all at once.
- Cut sausage into bite sized pieces. Spread browned sausage on the bottom of the prepared baking pan. Pour mixture evenly across the sausage layer.
- Bake in the preheated oven for 15 minutes. Then reduce heat to 350 degrees F and continue baking about 30 minutes more. Top should be lightly golden and the edges a light brown. A knife inserted into the center of the casserole comes out clean when done.
