Witch’s Brew

Witch's Brew aka Cider Smoothie -- A Pinch of Joy

Witches Brew tastes like – well, think apple pie and ice cream through a straw – perfect autumn goodness.  Without the food coloring, it is worth serving at a gathering such as a fall shower or small get together. Add red, orange or green food coloring and it’s Halloween without a doubt.  A two son mom is always looking for gross – but not too gross and definitely not gory – Halloween ideas. Food that looks gross but tastes great – that’s a win-win! Hence the choice of green food coloring :-) Costume ideas – no problem. There are very definite ideas, usually decided weeks in advance. Sometimes it is a challenge to make those ideas come to life, like the cartoon character that must look exactly like the tv show.  Other years, easy peasy, like the soldier which means pulling dad’s Army ... Grilled Pork Chops with Sauteed Apples

Grilled Pork Chops with Sauteed apples-- A Pinch of Joy

A quick and easy recipe from Bytes!  This one is super fast!  You'll need one medium pork chop per person.  A medium chop is 3/4 inch to 1 inch thick.  The ones Bytes used were about the size of my hand -- maybe three inches across by about five inches long.    Grilling time is 5 to 6 minutes on each side.  The apples also take about 10 minutes to cook -- no need to peel, just quarter, core and slice.  If your grill has a side burner, this goes really quickly.  Or you can cook the apples ahead of time and warm them just before serving with the finished chop.  Use whatever apples you have on hand, a crisp apple like Gala or Fuji is good.   Another Bytes' Bite --a meal that is quick to prepare and clean up and move on to the evening’s activity!  Grilled Pork Chops with Sauteed Apples ... Apple Dumplings with Cinnamon Sauce

Apple dumplings with Cinnamon Sauce -- A Pinch of Joy

Apple Dumplings are one of my very favorite desserts.  Absolutely adore them!!!  And who wouldn't?  Great apple taste and texture wrapped in flaky crust and baked in a cinnamon butter sauce.  Serve warm.  Add a scoop of vanilla ice cream to take the dessert to celestial levels.  Let cool and serve with an extra spoonful of syrup from the pan for cinnamon zing.  Refrigerate and have for breakfast.  Except there won't be any left overnight unless you hide it in a Velveeta box -- cooled and wrapped well. :-)  Not that I would ever use that trick. Apple dumplings are not a quick fix.  But they are SO worth the bit of time and effort!!!  Especially for a special treat for a holiday.  Or a special someone.  Or a family in need of a WOW!   They are, however,  straightforward and easy to ... Caramel Apple Salad

Caramel Apple Salad A Pinch of Joy

Wheels is a big butterscotch fan, but I’m not.  So I was more than a little skeptical when this recipe for Caramel Apple Salad came into my hands.   Butterscotch pudding??  And pineapple??   This is really good,  you’ll like it , my friend urged.   She was right -- I liked it!  Of course, I had to tweak it a bit – can never leave a recipe as is!  This is one of those so good it’s like dessert salads that are always a hit at potlucks and gatherings.  I use sugar free pudding mix to cut back on the total carbs, but you can use any instant butterscotch pudding mix.  For the same reason, I only use half the crushed pineapple called for in the original recipe.  You do NOT taste the pineapple at all in this recipe.  It provides the moisture for the dry pudding mix and a bit of texture.  ... Cinnamon Apple Baked Brie

Baked Brie with Cinnamon Apple

The first time I tasted this, I couldn’t stop saying Oh my gosh!  This is so GOOD, this is SOOO good.  Everyone laughed at me.  Then they scooped out some of this fabulous creamy, buttery, warm and spicy wonder  onto a cracker.   And could not stop saying Oh wow!  This is SOOOOO GOOOOD!!!  We all circled around, scooping and savoring and MMMMMing,  until 20 minutes later – empty plate. It is so easy to make.  Leave the peel on the apples to add color.  In fact, you could use a green apple and a red apple for more color.  I used Gala, but any crisp cooking apple will work.  You can leave the entire rind on the Brie if you like, but that is not our favorite part so I scrape off the top.  The side and bottom rinds will form a container for the cheese.  Water biscuits are good, but we also ... Grilled Ham and Cheese Sandwich with apple

Grilled ham and cheese sandwich with apple

Grilled Ham Cheese with apples on sourdough bread.  Several women from the neighborhood occasionally get together  to try new places to eat,  maybe shop a little and, always, talk a lot.  I was intrigued by this combination at a new to us restaurant, ordered it and have been making it at home ever since! Sourdough bread is a good bread for those who are diabetic. Studies have shown that  it does not raise blood glucose in the way that other breads will.  Scientists believe that the fermentation process used to make the bread rise produces lactic acid and reduces availability of simple carbohydrates, keeping blood sugars stable. The scale measuring the  rate at which a food makes blood sugar rise is called the glycemic index.  Anything that is rated 55 or less is considered to have a low ... [Read More]
