Quick scrambled eggs and bacon for a crowd came from celebrating a college graduation this weekend with an open house.  We began with breakfast for first comers, had mid-day dinner and ended with afternoon snacks for the littles.  All day eats!  Everybody contributed a dish or two.  For breakfast we had pastries, coffee cakes, yogurt parfaits and melon slices.  I wanted a bit of protein to balance the meal so we invented Quick Eggs and Bacon on the fly.  Although we were probably not the first to execute the concept, we had a perfect product! Crunchy Pea and Cauliflower Salad with Ranch Dressing

Crunchy Pea Salad with creamy ranch dressing and bacon -- A Pinch of Joy

We like the crisp crunch of cauliflower.   Add celery and peas and ranch dressing, a bit of tangy onion and crispy bacon, a handful of chopped cashews -- a quick and easy, delicious and colorful Crunchy Pea Salad. You can thaw the peas in the fridge ahead of time. Or not. (I usually don’t.) Break or cut the cauliflower into bite size pieces. I like the looks of the little florets in the salad, but sometimes a knife is needed to keep the pieces small enough to eat easily. Crisp the bacon yourself and crumble. Or use about 3 tablespoons of genuine crumbled bacon off the shelf to save time. Add cashews, just slightly chopped for a bit of texture and taste to “fancy” it up, if desired. Bacon Corn Chowder is a quick meal. It takes about half an hour to make it from start to finish. The word chowder comes from the French word “chaudiere”, meaning a three-legged cauldron used by fishermen to make seafood stews. When the fishermen returned from sea, each village had a large chaudiere waiting for a portion of each man's catch. The resulting stew was served during the community's welcoming celebration. Although a chowder originally always included seafood, Americans began substituting other handy ingredients, often with potatoes as the base. Warm and Cheesy Bacon Dip -- A Pinch of Joy

The hard part of making this warm, comforting bacon cheesy dip is finding a place to hide it so that it can cool a bit. Everybody wants to dig in right away! Good. But too hot to really taste the deliciousness. Put it on a cracker and wave it in the air to cool it. Better.   Best -- wait a bit longer until it is Goldilocks “just-right”. No burned tongue and the flavors shine. Easy to make. About 5 minutes and it is ready to pop in the oven. Use only precooked bacon pieces. Look for the brands with larger pieces if you can find them, as they will make a smoother, more flavorful blend. Onion can be omitted or if you want more kick, add another green onion or two. Chicken and Bacon Lasagna Rollups -- A Pinch of Joy

From my sister, Bee . . .Chicken and Bacon Lasagna Rollups . . .  a  creamy, cheesy pasta dish with chicken made over the top delicious with yummy bacon.  Sooo good.  I got to do the filling and rolling for this batch  -- since I was hanging around the pan of browned bacon, I think.  She's generous with bacon, but has this idea that everyone should have an equal chance.  :-)   I learned from her when visiting a couple years ago, that its so much easier to snip bacon into one inch pieces BEFORE browning.  Duh!  Here's what the pan looked like right out of the oven.  Too bad you can't scratch and sniff, because the aroma is delightful!! Cheese Bacon Burger

Cheese Bacon Burger is a product of my sister's Bee imagination.  She loves cheese.  And bacon.  And hamburger.  So she put them all together to create this seriously great barbecue burger.  Use at least 80 percent lean meat so there is a bit of fat to keep it moist.  Grill low and slow for tender, delicious burgers.  MMMMMM Cheese Bacon Burger   Print Author: A Pinch of Joy by Charlene Vance Recipe type: Meat Serves: 8 burgers Ingredients 2 pounds ground beef, 80 percent lean 6 pieces bacon 1 cup shredded cheddar cheese salt and pepper to taste condiments of choice 8 buns Instructions Cut bacon into one inch pieces and cook until crispy soft.
