What do you do with a bag of bananas? Make Peanut Butter Banana Bars!    Last time I was at the neighborhood grocery by my sister's house, they had just set out bags of perfect golden yellow bananas. I brought one of the bags home with me. I made Peanut Butter Banana Ice Cream and Banana Strawberry Blueberry Smoothies earlier. Peanut Butter Banana Bars were quick and easy to make, no added sugar.  Except in the chocolate chips and you could make those sugar free to if you wanted. Peanut Butter and Banan Ice Cream - A Pinch of Joy

What do you do with a bag of bananas?   Make Peanut Butter Banana Ice Cream!  One of the little groceries in town is a great place to find unexpected bargains.  Last time I was there, they had just set out bags of perfect golden yellow bananas.  I brought one of the bags home with me.  Since none of the bananas were over ripe, I figured I would have time to research recipes.   Here’s the first recipe I made: Peanut Butter Banana Ice Cream is simple – and supper delicious.  Cut up four bananas and freeze till firm.  Put frozen bananas in food processor, add the other two ingredients.  It does not matter if the peanut butter is creamy or chunky.  Any kind of milk will work.  Spin until mixed.  Freeze again.  Yum!   Hint: Forget using the blender.  You’ll end up with a frozen glob above ... Banana Nut Muffins -- A Pinch of Joy

Banana Nut Muffins are a quick and easy breakfast, a delicious addition to any meal, a tasty snack and a life lesson.  A life lesson??  Muffins are so easy to make that they are often the first baked item beginning cooks learn to make.  A muffin recipe teaches how to follow directions, how to measure ingredients, and other basic cooking skills.   (These are pretty darn good eating however,  even if you are an experienced cook!) To make muffins, the dry ingredients are measured then whisked together in a large mixing bowl.  Wet ingredients are measured and mixed together in a smaller bowl or large measuring cup.  Then the wet ingredients and dry ingredients are put together and stirred just until they are mixed.   Too much stirring makes muffins tough so some lumps are expected.  ... Banana Bread becomes a necessity around here once in a while when the bananas don’t get eaten as quickly as predicted in the grocery store.  It’s a classic supply and demand situation.  The supply quickly exceeds the demand when schedules change, the supply of other fruit surges or whims of resident banana consumers shift with the Nebraska “breezes”.    That’s anything less than 55 miles per hour – which is considered a blizzard force only if accompanied by snow.  But that’s another story. . . . Honey Banana Bread with nuts - A Pinch of Joy

Honey Banana Bread landed on the menu unexpectedly.  Wheels set the quart jar of thick amber liquid on the kitchen counter.   Organic honey sold by the grandfather of a fellow employee.  A quart jar!!!!  That is more than we’ve used in the last five years total!!!    A quick taste showed that it had a pleasant flavor, but not at all like the honey in the little squeezy bear.  Well – love me a challenge (and Wheels is really good at bringing them on!)    I hit the search engines.
