Lemon Blueberry Cheesecake Bars are perfect anytime of year, for any occasion. Like Wheel's recent birthday. He now loves dessert -- a fact that amazes me since he never did before. Take it or leave it and most times he would leave it. But a moderate sweet tooth has definitely made its appearance! I think it is because we've eliminated all the overly sweet cookies, cakes (and thick, sugary icings!), etc from our diet. Everything tastes better now. I made Lemon Blueberry Scones recently. Houseguests took us out for a delicious and lingering breakfast and no one was hungry come lunch time. We waited until about 2:30 and had tea instead. Sliced melon, strawberries and other fruit, some cheese and deviled eggs made up the menu, but the star of the show was Lemon Blueberry Scones. Light and flaky, full of delectable blueberries and a whisper of lemon topped with sweet lemon glaze -- mmmm! Cut the butter into the flour and other dry ingredients quickly with a pastry cutter. White Chocolate Blueberry Cheesecake
When Bytes cousin was visiting several weeks ago, she challenged him to try a recipe for White Chocolate Blueberry Dessert she thought sounded really good. He got the ingredients and “aged” them in the pantry. The fruit was used in another recipe but a second container was later purchased and waiting in the fridge. Then Wheels asked Bytes last Friday if he wanted to come along for a dinner out to celebrate my birthday. He said yes, and then committed to making a dessert for after dinner.
