Fudgy Chocolate Cookie Dough No Bake Cheesecake.  The perfect dessert to celebrate a special day -- anniversary, birthday or just because.  We’d already celebrated Bytes' birthday at a big family gathering with the traditional  cake and a rousing rendition of Happy Birthday.  This was a smaller celebration.  Perfect for cheesecake and fudginess! Five star dessert! Chocolate yum topped with New York Style cheesecake. The chocolate is the lightest fudgy brownie ever! Not too sweet, rich chocolate, light as a feather. The cheesecake is just barely dense, creamy without sweetness, the perfect foil for the deep chocolate flavor of the brownie. Amazing! Fabulous! The best dessert for a special occasion – like Valentine’s Day – any occasion that calls for chocolate. Or delicious. The melted butter gives the brownie it’s rich flavor and light texture. Peaches and Cream Cheesecake is a light and creamy  ending to a meal.  Or the star of an afternoon party like a baby shower. Peaches and Cream Cheesecake is a no-bake dessert.  Just peachy  anytime.  Sorry, couldn't help that pun -- just fell out!   =) If you can find sugar free peach jello, it will give you a deeper peach flavor.  I usually end up using lemon because the peach is harder to find. You can use regular gelatin if you aren't concerned about calories or carb counts.   You can also make this with fresh sliced peaches -- about two cups.  Wheels loves fresh peaches so I have to hide them in order to have enough to make something. These Chocolate Covered Cheesecake Pops are clearly a fail when you consider the appearance.  I am not destined to be a chocolate dipper!  See that leering face on the plate lower right?  Even the chocolate is going Mwhahaha!   However, the taste was great!  In the interest of transparency -- just so you know that all is not perfect at Chez Charlene -- the story of Cheesecake Pops. These sounded so good that I tore out the recipe and added it to the stack of goodies I wanted to make for a special luncheon. I mixed up the cheesecake (which isn’t really cheesecake – it’s more on the cream cheese truffle side). It went into the big freezer for the specified time and then life got crazy. Cheesecake Bars A Pinch of Joy

He is an excellent cook specializing in bread, pies and superb desserts.  He made these super delicious Cheesecake Bars for the family reunion dessert table  along with half a dozen pies like pecan, cream and peaches and others.  The pan emptied in a flash!    He said I couldn’t use his name – although everyone in our very large family knows of his culinary expertise --  half the population of three  adjacent states.  What’s a little more fame???  Especially when it comes to fabulous Cheesecake Bars!     These are very easy to make so don’t let the rather long list of ingredients and directions intimidate you.  Brother in law Chef chops the walnuts very fine, but I like a bit of texture so I stop chopping earlier while there are still pieces of nuts.   I used a fork to cream the packed ... Today is National Cheesecake Day!  At least according to the Kraft people – who may or may not have a vested interest in such a day.  But any excuse for a cheesecake, I say!  Especially a no-bake easy to make version. People often think that dessert is the first thing to go for those who are watching carbs, calories or otherwise eating healthy.  The old “if it is fun, tasty, or pleasurable  then it must be bad for you” theory.  Not true.  The occasional indulgence in a truly decadent dessert will not hurt if you fill your plate with healthy food the rest of the time.   Nor is it true that desserts are to be ignored on a regular basis.   Some decadent looking desserts use ingredients that have reduced carbs, calories or whatever else you are watching.  Some desserts are healthy on ...
