Italian Chicken Breast is a Quick and Easy recipe that is delightfully delicious and so easy to make that it will become a regular on the menu. Thaw the chicken breasts in the refrigerator overnight. Yes, you can thaw them in the microwave, if you forget. But it's one less hassle if you think ahead and throw the bag of frozen chicken breast in the refrigerator overnight. You can get right to cooking after work. The package of chicken breasts I used were wildly varied in size. Slice them in a way that will give you relatively uniform thickness. I laid the breasts on the cutting board and made slices abut 3/4 inch thick. Those will cook easily with about 5 minutes on each side. Be sure the oil is hot before adding the meat, dredged in egg and crumbs. This will make a quick and ... [Read More]

Garlic Chicken and Spinach Pizza
I loved Garlic Chicken Spinach Pizza!! I really liked the cottage cheese dollops instead of tomato sauce. Just the right amount of garlic, and I used tender precooked chicken so less time in the kitchen. Rolling the prepared pizza crust thin, reduced the carbs significantly – and we like the thinner crusts on pizza anyway. It also gave us 12 servings, instead of the 6 it said on the package. So there was enough for two meals – and was just as tasty the second appearance. I was the nerdy kid (with my brother) who begged Mom to eat lunch at school on spinach days. In those days, we could trade food – and Jay and I got ALL the spinach we wanted! Unfortunately that trait did not pass to my sons. Bytes liked the pizza – but NOT the spinach. Oh well, more for me! Since we are ... [Read More]
Tex Mex Chicken Soup
What’s for lunch? A question frequently asked in these days of being at home a great deal more than any of us are used to being! Today the answer is Tex Mex Chicken Soup. My project is to have something different for lunch every day this week. And then to share ideas and recipes with anyone else who finds lunch a difficult meal. If it is just me for lunch, I am happy with a cup of cottage cheese and a handful of crackers. Or a meat, cheese and mayo sandwich on low carb bread. Lunch is not my favorite thing. I’m usually involved in a project and I don’t really want to stop, so I don’t want a time consuming affair. Preparing lunch at home, doesn’t have to be hard. Or the same old, same old. And, if we are limited in our choices otherwise – like under a stay home order - lunch ... [Read More]
Quick and Easy Chicken Marsala
Quick and Easy Chicken Marsala begins with chicken breast fillets. That is chicken breast cut into half inch slices the full length of the chicken breast. If you can't find them in the frozen food area or the butcher shop in the grocery store, you can cut them yourself from chicken breasts. The even thickness allows for more even cooking and result in a tender, juicy finished product. Another essential is Marsala wine simmered together with heavy cream to make the sauce. And, of course, sliced mushrooms. Even Bytes eats the mushrooms in this dish without grumbling about "fungi". Dredge the chicken in flour lightly and add to preheated skillet with 2-3 tablespoons of oil -- enough to coat the entire bottom. Saute each piece 3-4 minutes on each side until golden brown. I check to ... [Read More]
Lemon Mustard Vinaigrette Chicken Sandwich on Artisan Bread
Lemon Mustard Vinaigrette Marinated Chicken on a fabulous artisan bread takes the concept of chicken sandwich to new levels. Sooo good I made it twice in one week – and we aren’t big sandwich eaters!!! Use your favorite artisian bread – sourdough, multi-grain or any round bread that is crusty on the outside and soft in the middle. Ask the bakery to slice it for uniformity. When you seldom eat bread as we do – go for a really good one when you do put it on the menu! I chose an asiago cheese loaf that was excellent. We opted not to toast it, but a little denser bread, like the sourdough, would be wonderful buttered and tossed in a skillet until just barely golden. For one set of sandwiches I used provolone cheese and needed two slices to cover the big sandwiches. For the second ... [Read More]
Crispy Ritz Cheesy Chicken
The whole family loves this cheesy baked chicken! And it is quick and easy to put together with a 45 minutes bake time so perfect for a quick dinner after work. 10 minutes of prep time and use the 45 minutes of bake time to do whatever else is priority. Keep one of the kids busy by letting them crush the butter crackers while you pull the rest of the ingredients out of the refrigerator and set up the prep station. I used Ritz crackers, but other brands of similar crackers will also work. I smashed mine in the sleeve itself, just squeezing the wrapped crackers until they were crumbly. You might need to use a heavy glass or other object to finish the job. You want to leave the crumbs small enough to stick, but large enough to provide some texture. A balancing act like so much of ... [Read More]
