Honey Plum Tartlets – Quick, easy, three ingredients, looks fabulous, and tastes as good as it looks! Just the right size for a touch of sweetness after a good meal. At our house, plums are a seasonal thing. Wheels loves to eat them out of hand, but there are always two or three left setting in the bowl for several days. This is a good way to use those last fruits of the season. If you want a crispy pastry, prick each square several times with a fork before arranging the plums. I like puffy, crispy flakiness so I just leave them. For guests, a little “real” whipped cream on the side or a small scoop of very good vanilla ice cream is wonderful. Cinnamon Cream Cheese Open Danish
Officially these cinnamon cream cheese treats are called Cinnamon Cream Cheese Open Danish. Cinnamon Flats is the name Wheels gave them and how they are known around our house. Leaving off the top layer usually given a Danish and spreading the dough in a larger jelly roll pan instead of a 9x13 reduces the carb count without reducing the deliciousness. You could serve these for breakfast. You could probably also eat them at lunch – I’m pretty sure you can. Maybe even serve them for a brunch or a tea party. We use them for dessert at dinner. Blushing Peach Pie
“Peach pie is my favorite.” Wheels didn’t tell me that until we had been married for at least eight years. Apparently, Wheels believes new information keeps marriage fresh because he springs this kind of stuff on me every once in a while. Come to find out his mom and sisters made wonderful peach pie that was the stuff of dreams. I know when I am outclassed in the competition so we just kept that special peach pie a mom/sister thing. But this year, for his birthday, it was time for me to make Wheels a birthday peach pie.
