Crispy Candy Easter Baskets

Our Easter dinner had three attendees – Wheels, Bytes and me.  That was okay.  We had celebrated a couple of weeks before with a big egg hunt for the littles and a potluck for thirty –ish people at my sister Bee’s home.  For our dinner,  I planned ham – but glazed ham balls instead of a big ham.  Sweet potatoes, green beans, salad, apple dessert and a bunny centerpiece.   But something was missing.   The dinner needed  just a little bit more to make it festive and fun.  We couldn’t eat a whole batch of Easter Treats when the recipe was sized for twenty five instead of three.  Two of us are low carbers and don’t need candy anyway.  Just a Little Bit to celebrate was okay, though.  Why should we miss out on a little fun and good cheer? A light lemon flavor combined with creamy white chocolate and a crisp chewy texture, Lemon Cookies with White Chocolate Chips are a study in contrast and complements.   Compliments too, because that’s what you’ll get when you make them!! I’ve mentioned before that I don’t own or use a lot of kitchen specialty tools. Quick and Easy Apple Cream Cheese Danish -- A Pinch of Joy

Cream Cheese sharpened with lemon juice, topped with cinnamony apples on a barely there crust -- out of this world goodness!  This is a perfect make ahead dish for a group brunch.  And sooo good hot out of the oven for a spur of the moment snack or dessert.  It is so quick and easy to make, which makes it even better. I used no sugar added apple pie filling.  One can is okay, but two cans are better, especially if you are using this as a brunch or breakfast dish.  Prettier and more filling.  Cool the danish overnight or refrigerate after baking.  This allows the cream cheese filling to set up and the flavors to meld.  It will cut easier and look very nice on the serving plate. Bunny Tail Truffles -- A Pinch of Joy

Bunny Tails and Easter Egg Truffles are simple and easy to make.  Shaping them and rolling the shapes in the coconut or sugar is a little on the time consuming side.  But they are so darn cute, it’s worth it!   My brother Jay and I would scarf down Mom’s shredded coconut stash as soon as we found the new hiding place. Maybe that’s why the younger ones in the family never learned to like coconut :=)   More coconut for us – as in “none left”!   Since not everybody is a fan of coconut for whatever the reason, half the mixture is made into colorful Easter Eggs. The moisture level varies among brands of cream cheese.  I used Philadelphia cream cheese which is more moist than some of the store brands.
