White Chocolate Nut Crunch

White Chocolate Nut Crunch -- A Pinch of Joy #Quick&Easy #Last Minute Gift #Gift in a Jar

White Chocolate Nut Crunch is perfect for those last minute gifts.  It's so quick and easy to make that anyone who knows how to use a microwave can make it in a flash.  It's easy to package, in a box, a bag or a jar.  It's a wonderful combination of flavors - a little salty, a little sweet and a whole lot yummy! The recipe below is pretty straightforward.  It can also be customized.  Change out the nuts. I used a package of combined sunflower seeds and pepitas, instead of just sunflower seeds.  Then I added a half cup of whole walnuts -- just because.   Add a cup of golden raisins instead of the dried cranberries -- or in addition to!   I used white chocolate chips, but you can use white almond bark or white candy melts, if you prefer.  I used coconut flakes off the shelf in the baking ... Classic Oreo Truffles

oreo-truffles-a-pinch-of-joy

Oreo Truffles can be made from plain chocolate Oreos, golden oreos or a flavored filling Oreo.  My favorite is a mint filled Oreo Truffle dipped in chocolate.  This was a special request so it is a Peanut Butter Chocolate Oreo dipped in chocolate.  Pretty darn good! Be sure to use original Oreos -- not the Double Stuff filling.  And yes, any brand you like is okay.  (But would you have looked again if the title was Sandwich Cookie Truffles???)   If you want to add sprinkles or chopped nuts to the top of the dipped balls, do it while the chocolate is still warm so they will stay in place. The time needed for chilling means you need to plan ahead a bit to make these. I prefer to chill the mixture for about an hour before using a cookie dip to measure out the individual balls.  To me it is ... [Read More]

Grinch Kabobs

Grinch Kabobs -- A Pinch of Joy Cute, colorful, healthy!

Grapes, bananas and strawberries -- oh my!  One look and everyone will know they were Grinch inspired.  These are so cute and colorful, they will make any party fun! They are perfect for kid events and they love to help assemble them.   Adults laugh when they see them on a buffet table and love them, too. And – big bonus! – they are good for you. You can assemble them using short 6" kabob sticks. But if kids are involved, look for the blunt coffee stirrers. The little straws work great and are sturdy enough to pierce the fruit without bending. I found flat bamboo stirrers with rounded ends that also worked well. This is another quick and easy holiday treat that requires no baking and can be made in quantity as large or as small as you want. Grinch Kabobs   Print Cute, ... [Read More]
