Purple Ribbon No-Knead Cinnamon Rolls

Purple Ribbon Cinnamon Rolls -- Quick, easy, no-knead, a winner every time -- A Pinch of Joy

Buttery, sugar crisp and totally delicious, Purple Ribbon No-Knead Cinnamon Rolls are not your grandma’s doughy cinnamon rolls.   No frosting needed, either.    These Cinnamon Rolls are quick and so easy to make you can have them in the oven in just over two hours or you can make the dough the day before and let it rest overnight in the fridge.   No kneading required!  I’ve been making these rolls since I was in high school and they’ve brought home purple ribbons (the best) every. single. time.   They are that good!!  They are a part of every holiday breakfast -- a tradition! The recipe itself is very simple.  Mix the yeast with warm water from the tap.  When you run the water across your wrist it should not be hot, neither should it feel cold.  Lukewarm is what you are going for ... Gooey Golden Chex Mix

gooey-golden-chex-mix-a-pinch-of-joy-chex-and-golden-grahams-with-a-few-friends-coated-in-a-not-too-sweet-syrup-you-cant-eat-just-one-bite

Gooey Golden Chex Mix.  You can’t just have one taste.  Once you start eating, it is “just one more handful” until the bowl is empty.  Great  stuff to package for neighbor gifts.  Perfect addition to a snack buffet for any occasion.  Just don’t make it too far ahead.  Because -- it will disappear before it becomes a gift.   Just try resisting temptation by sealing this mix in gallon zip bags and putting it away. Somehow a bag always ends up back onto the counter with less in it.  Cereal – that should count for breakfast, right?  Trip to the kitchen for coffee – need a go with snack. Lunch time – dessert.  Out the dining room door to feed the birds – just a small handful as a reward for helping little creatures.  Back to the office – a small bowl won’t hurt.  No wonder some folks call this ... Cheesy Crescent Scrambled Egg Casserole

Cheesy Crescent Scrambled Egg Casserole -- A Pinch of Joy

Cheesy Crescent Scrambled Egg Casserole is perfect for a holiday brunch. It is a nice alternative to the usual Egg and Bread Breakfast Casserole. The Cheesy Crescent Scrambled Egg Casserole is a party animal, especially if you use the optional egg wash to “make it pretty.” Serve with mixed fresh fruit, yogurt parfait, a light crispy pastry roll and a beverage bar. Beautiful and filling for a day of celebrating. This is a little “busy” to make, but so worth it. If you have hearty appetites – that’s this house! – plan on 9 servings instead of twelve. You might want two of these delicious casseroles for a brunch buffet because they will be back for more! You could brown the sausage ahead of time to make things a little easier. Also, buy the crescent sheets if you can find them. I don’t ... [Read More]

Struessel Topped Sweet Potato Casserole

Sweet potato casserole is good anytime of year . Dressed up, it’s the perfect accompaniment to any holiday meal. This sweet potato recipe has no marshmallows. Just a crunchy Struesel topping to contrast with the deep sweet potato flavor! No sweet, sticky marshmallows fans in our house :-) Cook and mash the sweet potatoes before measuring. If you are in a hurry (or can’t get fresh sweet potatoes, as they are not always available), use a 40 ounce can and drain before mashing. If you use yams, remember they are a bit sweeter than sweet potatoes so you might want to reduce the sugar a bit. You can add coconut to the topping of this traditional dish.  I usually don't, but when I made this I had a bit of coconut hanging out and lonely in the pantry.  So I added it.   Baking time will vary a ... Celebrate Simply . . . Thanksgiving

Celebrate Simply . . Thanksgiving -- A Pinch of Joy

Celebrations add richness and depth to our lives.  They are a time to connect with others in our family and beyond.  They call to mind our collective history in ways that can be adapted to the individual.  The first time I heard of lasagna for Thanksgiving dinner I was surprised!  But it is a perfect illustration of the dynamic nature of celebrations!  They change to fit the situation and times in a way that is significant to the persons celebrating and, in the process, strengthen the bond of family and friends.  I love to look at beautiful holiday tablescapes and gorgeous seasonal layered vignettes. I love to create them.  But sometimes the weather does not cooperate nor is there time or energy for such things.  Still celebration calls for something out of the ordinary.  So . . .   make ...
