Grilled cheese sandwiches show up on the lunch menu, not frequently but regularly, at our house.  Barbecue chicken grilled sandwiches – a whole new level of lunch goodness!   It is also a very versatile recipe, easily customized to your family’s taste. Make your own delicious barbecue pulled chicken by following the steps above.  The sauce will cook into the chicken so your sandwich will have all the chicken and enough sauce to give flavor, but not drip.  You can make the chicken  ahead of time and refrigerate until time to warm and add to the sandwich.  (See note below.) A fritatta is cooked slowly over low heat.  Omelets are cooked quickly over higher heat with filling  placed in the middle of the omelet and  folded before serving hot from the stove.    Fritattas are often served at room temperature, making them perfect to make ahead for brunches or larger groups. A fritatta is similar to crustless quiche which makes it perfect for low carb dining or “don’t want to make a crust” meals. Cobb salads are a favorite in our house!  They usually make an appearance once a week like clockwork, especially in summer.  Crisp Romaine lettuce topped with a variety of healthy protein and drizzled with your choice of creamy Ranch Dressing.  Cobb Salad fits deliciously into both Keto and Low Carb ways of eating. They are so easy and quick to put together, too.   Avocados all end up on Wheel's bowl -- it's a texture thing! -- but he doesn't mind because he loves them.  Fresh limes in the Great Plains are usually  reasonably priced only in season, but they are a nice alternative for dressing. Skillet Lasagna Is a loose rendition of the standard baked version.  They both have all the elements of meat, cheese, tomato sauce and pasta in common.   Baked lasagna has big ruffly noodles layered with sauce, meat, then cheese and repeat.  Skillet lasagna stirs meat, sauce and noodles in the pan, then tops with cheese when the noodles are just right for eating. For anyone maximizing time, skip the layering  and enjoy the same flavors.  You can go from cupboard to stove to table in about 30 minutes!  This recipe is budget friendly and kid friendly too! Quick and Easy chicken Ranch Pizza -- A Pinch of Joy..

A really quick lunch piping hot from the oven, Chicken Ranch Pizza is great for when you want some comfort food - fast and flavorful. Reach in the pantry and raid the refrigerator.   Flat bread or prebaked pizza crust, shredded or chopped cooked chicken, a couple of sliced green onions and a package of cream cheese flavored with ranch dressing mix. Top with shredded cheese.   Viola -- Chicken Ranch Pizza.  From inspiration to table in about 25 minutes.
