Polka Dot Macaroons are quick and easy to make, a coconut lover’s dream! The mini candies are just the perfect size. However, I think it would be fun to use the red and green regular sized M&Ms for a festive Christmas cookie. I made a couple of attempts toward that. I actually bought the Christmas colors. And not once, but twice, they completely vanished before I got the cookies made. And it was my fault. Because I opened the package. Coconut Macaroons with Chocolate would be a perfect Valentine gift. Or an any time treat! Cookies are extra chewy because they are loaded with coconut. I love coconut. And chocolate. Put the two together – heavenly! My brother Jay was also a big coconut fan and between the two of us we could consume a bag of coconut in an afternoon. Much to Mom’s consternation. Delightful Coconut Macaroons
Coconut Macaroons a re another quick and easy, but elegant dessert. I was going to pipe melted chocolate lines across the top for an added touch, but these disappear fast. Just glad there were enough to show you a photo! I use the eggshell method to separate white from yolk. Crack the egg in the middle and gently pull it apart with an upturning and lifting motion over a small bowl to keep the yolk in one half of the eggshell. The white will pull away and slip into the small bowl. Gently pour the remnants of the egg back and forth between the two more or less equal half egg shells, being careful not to puncture the egg yolk.
