Tuscan Chicken Rice Bowl -- A Pinch of Joy

A delicious meal, ready to eat in about 30 minutes.  You can assemble from scratch which may take a just a few minutes longer at cooking time or freeze ahead of time, thaw overnight and have it ready in a flash for a healthy work night meal.  Add a quick salad of spring greens, feta cheese, a few walnuts and blueberries. Look for chicken breast fillets as they are about half an inch thick and will cook quickly and evenly.  Most stores will carry them, but if you don't find them make your own fillets.  With a sharp knife slice a chicken breast lengthwise into half inch pieces.  Look for chopped mushrooms if you have a "fungus-phobe" like Bytes at your house.  He'll eat chopped mushrooms with little comment, but objects to the bigger pieces.  (We're making progress with that -- lol!)  ... Cheese and Spinach Stuffed Mushrooms

Cheese and Spinach Stuffed Mushrooms are a delicious, warm, cheesy and filling addition to an appetizer table. You can also serve them as a side dish at a pot luck. Sooo good.  Unless you talk to someone like Bytes who can only mumble “fungus”.  That’s okay – more for the rest of us.  And they disappear quickly so don’t dally in loading your plate. Look for packages of larger baby bellas in your produce section.   Larger mushrooms  are easier to stuff and handle without breaking.  When dicing the stems and cutting the spinach, make the pieces small so they will blend into the mixture evenly.  Italian mix cheese is not available at every store; Kraft is the brand I find most often.  If you don’t find it at your store, use shredded parmesan and romano.   Bake until the cheese is golden ... Mushroom Swiss Burgers

Mushroom Swiss Burgers evolved when I picked up some burgers from a supermarket deli after work one night. We all liked it so well, that I just had to come up with a copy cat version.  The grocery store version may have it on speed – just heat the cooking surface and 10 minutes later you have burgers.  But the home made version is less expensive and only takes a couple of minutes to mix --- plus the ability to plan ahead far enough to also buy mushrooms and swiss cheese when you find the meat on sale.  You get that picture, I’m sure – no need to say more! I usually buy 90% lean or higher if I am going to use the ground beef in a dish, but 85% lean works well when the meat does a solo appearance. Creamy Mushroom Soup makes a simple, yet hearty meal.   Food of the Pharoahs, strength for Greek warriors and  miracle healer for the ancient Chinese, mushrooms have quite a history. Although often considered a vegetable, they are not a plant at all. They have no roots or leaves, no flowers or seeds.  They do not need sunlight or soil, instead growing on decaying organic matter in the dark.  The ancients were so amazed by this unusual and mysterious food,  that they attributed super powers to mushrooms.
