“Peaches now!”  The handmade sign on foam board leaning against the pickup in a mall parking lot declared we are in peach season.  Everyone is looking for great recipes to use the bounty.   This spicy peach salsa fits the bill and is absolutely gorgeous! The combination of deep colors is beautiful, The delicious blend of sweet and spicy flavors makes it a wonderful addition to simply prepared fish, chicken, or pork dishes. For best results, make this salsa the night before serving so the flavors have a chance to blend. This will also soften the peaches and onion to a nice consistency. Shallots have a milder flavor than onions, including scallions, aka green onions. Quick and simple to make. One batch = 8 breakfasts.  Easy to grab from the refrigerator.  You can just as easily take it with you to eat later.  A super delicious nutritional powerhouse.   What could be better for breakfast than Peach Cobbler Overnight Oatmeal? Chia seeds are relatively new in our pantry.  I was surprised to learn they are in the mint family as the seed of Salvia hispanica,  found in Mexico and Guatemala.  They were a staple of Mayan and Aztec diets, so they’ve been eaten for a long time! Peaches and Cream Baked French Toast -- A Pinch of Joy

Peaches and Cream topped with struesel on top of a puffy custard French Toast -- a winning combination of sweet, crunchy, creamy and downright delicious.  This  can be made ahead for a deliciously spectacular holiday breakfast. Begin with a dense bread, such as French, Italian, sourdough or other artisan bread.  Cut bread slices in quarters and fit them snugly in an 8x8 inch pan.  Add pats of cream cheese to each piece and stack another layer of bread quarters on top.  Stir together the custard ingredients and pour evenly over the bread.  I used no sugar added sliced peaches and placed them tightly over the bread and custard.  Cover with plastic wrap, pop in the fridge.  Quickly mix butter, pecans, flour and brown sugar together and put the mixture into a zipper sandwich bag so it will ... Peaches and Cream Cheesecake -- A Pinch of Joy

Peaches and Cream Cheesecake is a light and creamy  ending to a meal.  Or the star of an afternoon party like a baby shower. Peaches and Cream Cheesecake is a no-bake dessert.  Just peachy  anytime.  Sorry, couldn't help that pun -- just fell out!   =) If you can find sugar free peach jello, it will give you a deeper peach flavor.  I usually end up using lemon because the peach is harder to find. You can use regular gelatin if you aren't concerned about calories or carb counts.   You can also make this with fresh sliced peaches -- about two cups.  Wheels loves fresh peaches so I have to hide them in order to have enough to make something. “Peach pie is my favorite.”  Wheels didn’t tell me that until we had been married for at least eight years. Apparently, Wheels believes new information keeps marriage fresh because he springs this kind of stuff on me every once in a while. Come to find out his mom and sisters made wonderful peach pie that was the stuff of dreams.   I know when I am outclassed in the competition so we just kept that special peach pie a mom/sister thing.  But this year, for his birthday, it was time for me to make Wheels a birthday peach pie.  Actually,  his sister  – 1000 miles away –  kept mentioning the peach pies she was making for the freezer and got his taste buds all wound up.  I had the recipe and he bought some peaches.   The pie turned out beautifully and tastes wonderful.  Do you smell conspiracy ...
