Bacon Wrapped Bourbon Mustard Pork Loin -- A Pinch of Joy

Bacon brings this pork loin roast to a whole 'nother level.  It's natural saltiness and smokiness adds complexity to the spicy  kick of the bourbon mustard.    The mustard brand used in this recipe (Stoneridge)  has some crushed seeds in the mix which adds more kick and a bit of texture.  I chose a thick cut bacon.  Each slice is twice as thick as a standard slice of bacon --- mmmore bacon flavor and it will hold its shape better through cooking and slicing.  I also precooked the bacon for a couple of minutes to give it a richer color.  You don't want to fully cook the bacon because the remaining bacon fat will baste the pork loin as it cooks, keeping it juicy and tender. Basil Balsamic Pork Chops take less than five minutes to prepare and cook in about the same amount of time on each side.  The marinating process takes 2-12 hours depending on your schedule and when you prepare it.  But – the process requires absolutely no attention from the cook.  Unless you want to flip the bag over once or twice.   An absolutely wonderful dish with only 15 – 20 minutes of hands on time!   Note that there are two ways to choose from for preparation.  Use a grill or use a broiler, whichever you prefer.  Me – I go for the countertop grill pretty much year round.  Wonderful served with rice or potato prepared just about any way, a nice crunchy salad or a cooked colorful veggie. Sweet n tangy barbecue pork chops are quick, easy and sooo good!  The first time I made them both Wheels and Bytes spoke after the first couple of bites.   “You can make these any time” was Wheels opinion.  Bytes said, “These are really good.  I’d eat them again.  And again.”  Nice to know the dish was appreciated and enjoyed.  However, the recipe is easy – they can make these barbecue pork chops for themselves!    :-)   ‘Course both of them are really good about painting  and executing some of my wilder ideas, so maybe it’s a fair trade, after all. Honeyed Pork and green beans cooked long and slow in the slow cooker.  Easy delicious one pot dinner. I tend to buy meat only when it is on sale.  Usually I end up with several pieces of meat that need to be frozen or cooked immediately.  This recipe works either way.   Make it it right away.  OR follow the Make Ahead Instructions to prepare everything  ahead of time and freeze until needed.   If desired, you can drop the sealed bag into another gallon bag and seal it.  Then you don’t have to worry about the seal coming loose as multiple cooks (or snackers)  rummage in the freezer. Pork Tostadas

Pork Tostadas -- A Pinch of Joy.

Pork Tostadas are open faced sandwiches made on a crispy fried tortilla.  Tostada = toasted.  Anything that can go on a taco can also be found on a Tostada.  You know I am a wimp when it comes to spicy and to me Mexican food meant spicy.  Wrong!  How did I find out?   Last spring I noticed our local grocery offered cooking sessions.  Always looking for new dishes and ways to make our meals healthy and varied, I signed up immediately.  I’ve added to our food rotation things like Pork Tostadas and more.   I love it!  For many reasons! Orange Glazed Pork Chops has been a go-to company meal forevah in our house.  When sister Kay called a couple weeks ago and said “if you guys are going to be home, we’ll stop by in an hour”, I said “great, I’ll make dinner” and tossed a pan of these in the oven.   When sister Bee and hubs came to celebrate our anniversary with us last Saturday, these were on the menu.  That’s why we moved 1000 miles! Not to make pork chops but to share meals and laughter with family whenever we want!
